Mexican Rivera excursion ideas

Excited about planning a retirement cruise for myself and my sister next May for the 7 night Mexican Rivera! It will be our second Disney cruise, we throughly enjoyed our California Coast cruise on the Wonder last month. Any ideas or suggestions about port excursions will be appreciated!
 
I've sailed on the Mexican Rivera several times on the Disney Wonder and I typically go scuba diving at all the ports but obviously you need to be certified to do that. However when scuba diving was canceled I did try other port adventures. Some of the other port adventures I have done was kayaking/site seeing tour in Cabo which was fun but I don't I would do it again. I also tried the extreme canopy adventure in Puerto Vallarta which was a lot of fun and I would definitely do that port adventure again. I also did some city bus tours/shopping at a few of the ports but I prefer to do active port adventure and sitting on a bus sites seeing and shopping is not my thing. I also just stayed on the ship a few times during port days which was fun as well and most likely going to be my plan if scuba diving is canceled next time I sail on DCL to the Mexican Rivera which is probably next year. If you haven’t done it before the dolphin experience at Cabo is great. But be sure it’s the one where you get in the water and get to swim with them. If there is an excursion to Todo Santos it is s cute little town. At Puerto Valletta I don’t know about excursions but you can easily take a city bus to the Mallecon downtown area. It is a beautiful walking town. Lots of restaurants. If open for lunch the river cafe off the main drag right on the little river is great. Love PR! The Mexican people are so incredibly sweet and nice.
 
It’s been a while since I did the DCL Mexican Riviera cruise, but I chose a mix of sightseeing and food tours. It appears that Cabo and Puerto Vallarta are the only ports that are the same on the new cruises. Based on the port adventures that are listed, I did the Historic Towns & Tequila Making and the San Jose City Tour. I enjoyed both and was really careful when eating food to make sure I didn’t get sick(eating only cooked food, no ice in drinks, etc). I would suggest picking excursions based on what you want to see and do. While I like Mexico, I didn’t find that there was much to see in any of the cities we visited.
 


Last fall we did the Adventure Zip line in Puerta Vallarta and it was the best excursion we have ever done! In Mazatlan we took a bus to a resort (can't recall the name - perhaps Riu?). It had an included buffet lunch that was fantastic and the pools and beach were perfect.
