The executive chef job posting says applications must be submitted by November 12th. The Sous Chef and other postings say their deadline is November 20th. I’m not familiar with the turnaround for opening a new restaurant though - maybe someone with more insight could chime in?
My husband is a former chef and thinks with these timelines it will be January at the earliest. At best applications close in mid-November, at least 1-2 weeks to review them and schedule interviews, a week of interviews, people need to give notice to their current employers, and all tolled that is conservatively at least a month. Add in what is usually a month of training (and potentially soft openings towards the end of that), not to mention the holidays in there, his earliest estimate would likely be around the MLK holiday weekend.
 
I'm expecting Space220 to open like the rest of new restaurants recently.
They probably won't take ADRs until they're open for a few months.

How has this worked in the past? If they don’t have an ADR system in place at first, is that likely to mean showing up hours in advance? Any intel on what might be required to snag a table?

Our family is going in February and this is high priority for us.

I think that's part of the point: It will likely be earlier than it would be were it a "normal" restaurant, because a lot of the things associated with a normal restaurant are just not applicable for Disney, because of how much central control there is.
 


Seems like it would make sense to at least start up the ADR system for the furthest time out in April. Because chances are it is up and running and is already getting a lot of demand by then.

I am really hoping so for our trip which is Nov 30th to Dec 15th. But given that the closing date for the sous chef is Nov 20th I am trying not to get my hopes up!
 
Just booked all my ADR for April/May.

When this pops up I'll just have to squeeze it in one day. The plus to having a park hopper. Even if just to experience it and have a drink/snack.

I believe that's the moment just after Wall-E escapes the ship. He's not equipped to be in open space so he improvises with the fire extinguisher. So my guess is that the GIF means: you might not have enough time to prepare your "space suit and EMU" but be ready to improvise if you do find yourself in space. Which would be a cute, but total non-answer.

Still, hoping that "winter" means it'll be open by the time I go in March, and that I'll be able to get an ADR!

I think most people in the US think of wintertime starting by Thanksgiving (if not earlier). But "winter" technically starts at the winter solstice on December 21, 2019 and ends at the spring equinox on March 19, 2020. So, technically, they have until March 19 to open and make the winter time frame. I'm not sure how officially the WDW Twitter speaks when they say "set to open" so who knows if they'll even make that. I sure hope so.

But didn't they say Winter 2019? That gives them a tight window. It'll basically open sometime between 12/21-12/31 :P
