Definitely salt. I'm from TX and that's how we all ate it. Also, just as an aside I put salt and pepper on canteloupe.
My uncle always salted watermelon. I tried it once and it was not good. I just like watermelon as-is. It's a perfect fruit. He also put several shakes of salt on top of the coffee in the coffeemaker before brewing. I do this. It tones down the bitterness and doesn't taste salty at all.
.....for sure, cukes need all the help they can get.....and most mango, except for the tiny yellow, cashew shaped beauty mangos...have to wait for them to wrinkle before the sugar just pours out....the are currently my food of salvation, one of five foods that does not taste like gasoline during my neck radiation.We've salted it before because DH grew up that way, but I'm not a fan. However our household is a huge fan of Tajin - especially on cucumber and mangos. I'm meh about it on watermelon.
...........you must be from Hermiston Oregon, .....the west coast king of tasty watermelon!!!!!Salting is very popular in the Carolinas;, but it's considered an abomination where I come from. I don't truck with salting fruit.
