We do a week at Universal. My DD is 11 but we have been doing week long Universal trips with her age 8,9,10. You need time to do the harry potter stuff properly. They are perfect age for the interactive wands. To do all the spells takes time but my daughter loves it the cast members who help...

We do MNSSHP when we do our Universal trips. If you look in the trip reports section my Oct 2014 trip report is on when we did just that, my daughter was 8 that trip and a similar trip October 2015 when she was 9 (we did the Halloween dessert party too then).

Great start. The weather looks fabulous. The ice cream flight does aswell we have never been there, adds to list.

Disney are usually good about moving bookings from one year to the next. Is that an option, things may look different in a years time. I have to say I've not kept fully abreast of Zika situation as I'm not having any more children.
