I would suggest choosing one park: Epcot or Animal Kingdom. We have done US/IOA several times in one day.... I know they have added quite a bit so that may not be possible now... But back in May we saw the main sights there in two half days. Remember you will skip quite a few...

OP I grouped your fav's into a list based on Proximity. Haunted Mansion is close to Fantasyland, but on the way between Fantasy and Frontierland. With our kids now older... we don't cover Fantasyland as we used to. If you were going earlier... I would agree with PP's to do Fantasyland first...
