I went at that time this past year and had a great time. As long as you manage your expectations then you should be fine. Agreed with HM, eat at off peak times. With express pass you should be able to do everything in the 5 days no problem. Start with the Harry Potter rides first though...

Two that come to mind is to take the boat to MK on the first day. We just like seeing the castle slowly get closer and closer. We always get a box of popcorn to share at wishes that evening. And it it's not a disney holiday unless we got to CoP.
