I contemplated DDP years ago but it was just WAY too much food. We eat mostly at our camper but when out and about, we either split a meal, order a kid meal, or just snack around.
So take it for what it's worth. Was speaking with a fellow camper at The Fort who had become friends with a CM who worked at The Fort. Says they are not actively enforcing the e bike ban as long as:
1. You are peddling.
2 Not going over the speed limit.

If your taking a mid day break and heading back to the SAME park, you do not need a hopper. You can enter the same park as many times as you want with a base ticket.
Saratoga Springs Treehouse Villas are peaceful as are the cabins at Fort Wilderness. As others have said Wilderness Lodge or Animal Kingdom Lodge are good choices. I can make near about any resort as peaceful or stressful as I want.
I prefer 1700. 1700 seems to have more "easier" sites to back in and is closer to the bus stop. I have a 37ft 5th wheel with long wheelbase dually. 1700 and 1600 share a bath house that is on the 1600 side. You can always make a note on your reservation to be close to a bath house.
