Ugh, my two favorite parks! If you can get a FP for FOP that second day, then I would get it. You can always decide during your trip. Then, if you decide on DAK, you have the FP. But if you decide on Epcot, then you can drop the FP and see what's available at EP. I've never seen Avatar...

Yeah... don't go during Christmas if you can help it. The other parks do get busy. A wave of people who were turned away from mk because of capacity usually hits the other parks around 10-11am. Spring break and Thanksgiving will be crowded too, but not nearly as much. You can have a good time...

Most people arrive to WDW on sunday night and do MK monday. So any other park but MK on mondays is usually a good option.

The roof does retract but CMs aren't supposed to let you do that. It's a safety hazard. If you are caught with the roof retracted you will be asked to put it back.
