I would get Epcot out of the way in the morning. If you utilise FP for some attractions and get through everything before 3-4pm you will have time to do Disney Springs that night.

Definitely do the Mummy. It is a bit more intense and rough than Gringotts, but very much worth it. I am not a thrill seeker but still loved it.

I would call Disney. I am unsure if you can upgrade online, however I am pretty sure you are able to upgrade at the front of each park. You will have until the third day of visiting the parks to upgrade to a park hopper. However you are better off doing it before you even arrive at Disney

I was at DHS yesterday and the crowds and wait times fluctuated immensely. The Rock n Roll coaster was down for the first hour but immediately went 65 min then before lunch went down to 30min and continued to fluctuate throughout the day.

It does greatly depend upon the day. However personally I would do right before closing or later in the evening, I feel like it offers for the most part shorter lines.

To get FP 60 days out for FOP is extremely hard. The window opens at 7am on the 60th day out. However I would give it a try.
