Just pick the rides you want and skip everything else like restaurants/shows/parades/etc. Then all that's at the top is whatever 2-3 rides you selected. I also changed mine mid-day if I had already gotten a few of the top ones and moved on to second tier choices.

No, you have to have Genie+ to get LL. You can get the paid ILLs in each park without it (currently 7DMT, FOP, Guardians, and ROTR) and for those rides you can't get LLs for them even with Genie +, which I find kind of annoying.
