anyone have any good make-ahead recipes?

i have to have an outpatient procedure done and will be out of comission for a few days. and we all know how that works. i dont want mcd's and pizza for week. soooooo i wanted to make some stuff up so all he will need to do is pull it out of the freezer and put it in the oven. i was thinking of making some lasagna. but i dont know what else to make. any suggestions?

Only a few days? We like the Chicken Helper Fried Rice stuff & I've already made it ahead for DS when we were going to be away a couple of days. It's actually almost better leftover . . .

I also usually make a couple of meat loaves & then freeze one when I do them. I make Mac & Cheese (& Ham) from lunch meat & cheese ends. That freezes really well.

Something even easier would be to have some of your favorite frozen meatballs on hand. (We use Mama Lucia.) Before he leaves in the AM have DH put them in the crock pot with a jar of sauce and have meatball sandwiches.

It's getting cold here & I always think of soup. When I make vegetable soup I always make a huge pot & freeze some.

That's all I can think of right now. I'll keep pondering the situation & see if I come up with any other ideas.

I was thinking enchiladas are good, we've frozen those, meatballs,
how about manicotti?
