bannana bread recipe please

my son always wants bannanas when we go to the grocery store and then doesnt want to eat them. so i always have bannanas in the house. i usually bake a pie or add them to a cookie recipe. but today i am thinking "mmmmmmmmmmm....bannana bread....mmmmmmm" so can anyone help my craving?

Something else I do with bananas that "go begging" is called (oh so appetizingly) Frozen Junk. My grandmother used to make it for us when we stayed at her house. (She wasn't much of a cook - mostly used canned stuff - but this is GREAT!)

Just take 1 can crushed pineapple with the juice, slice the bananas into the pineapple, add marachino cherry halves & some of the juice from the cherries. Just stir it to distribute everything evenly & freeze. It works best in a shallow dish. My grandmother used to put it in the ice cube trays - the old lever type. You need to take it out of the freezer ~10 minutes before using it. Otherwise, it's difficult to spoon out. I always liked mine semi-defrosted - if I could wait for it!;)

yes i did, thank you. i am sorry i thought i had sent a thankyou email back to you. i havent gotten to explore them much. i am a SAHM but we own a business. i dont work it but i do a lot of the running for the guys and this has been a busy week for me.
 


Put your wet ingredients and bananas in the blender and then mix with dry ingredients in a bowl...makes very smooth bread.
 
After trying several different banana bread recipes over the years, I finally found a really good and easy one of the FoodTV website. I have made it many times now and it is always delicious.

KONA INN BANANA BREAD

2.5 cups flour
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups ripe mashed bananas (about 6 bananas)
4 eggs slightly beaten
1 cup coarsely chopped walnuts (optional)

Preheat the oven to 350 degrees.

Grease and flour 2 8x4x3 inch loaf pans.

Stir together the flour, salt, and baking soda in a bowl. In another large bowl, mix together the shortening, mashed bananas, eggs and walnuts. Add the combined dry ingredients and stir only until the batter is thoroughly blended.

Pour into the prepared pans and bake 50-60 (I found my loaf pans took 70-80 minutes since it is a little larger and is an "airbake' insulated loaf pan) or until a skewer or straw inserted in the center of the loaves comes out clean or with only a few moist crumbs. Remove from the oven and let cool in the pan for 5 minutes then turn out on a rack and let cool completely.

Yeld: Two 8x4x3 inch loaf pans

Prep Time: 20 minutes

Cooking Time: 1 hour

I often cut the loaves in half and cover tightly with foil. I then freeze half for later. It is so nice to have as a treat a few days or weeks later.
 


I forgot about this one! And I even have all the ingredients in the house! DS will be sooo excited - when he finally wakes up! ;)

Strawberry Banana Bread
from the Whispering Canyon Cafe, Wilderness Lodge
Makes 2 loaves.
1 cup butter, softened
2 cups granulated sugar
2 cups ripe bananas (about 6 medium-size), mashed
4 eggs
1 teaspoon salt
2 teaspoons baking soda
3 cups flour
1 ½ pounds frozen sliced strawberries, thawed
Grease two 9”x5” loaf pans. Preheat oven to 325 degrees. In a large mixing bowl, cream the butter and sugar. Incorporate the bananas and scrape the sides of the bowl with the spatula. Add the eggs one at a time, mixing thoroughly after each one. Set aside.

In another bowl, mix together the salt, baking soda, and flour. Add the flour mixture to the butter mixture and stir until fully incorporated. Add the strawberries. Pour into prepared pans and bake for 60 to 75 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a rack before inverting onto a plate.
