Big Family Trip: Which Theme Park Days?

Hi!

We visit Disney every year and usually do five full days alternating resort days (WBC) with park days. Typically M, W, F at the resort and T, Th at the parks. This year we're bringing the extended family so there will be 14 of us: eight adults, four elementary aged kids, a three year old and a one year old.

We planned on doing this five day pattern again, but now we're coming down a day earlier and also adding in the Kennedy Space Center on that Wednesday (so far a launch is scheduled!).

So here's my question: we had planned on MK on Tuesday but that day is an early closure, which would be good for crowds, but a short day nonetheless, and then our trip is front loaded with resort days and then a cluster of activity days. Would you do MK on Monday or Tuesday?

Option #1: Sat. Arrive, Sun. Resort, Mon. Resort, Tues. short MK day, Wed. Space Center, Th. AK, Fri. Resort and Hoop Dee Doo, Sat. home

Option #2: Sat. Arrive, Sun. Resort, Mon. long MK day, Tues. Resort, Wed. Space Center, Th. AK, Fri. Resort and Hoop Dee Doo, Sat. home

The tiny kids and parents will not be coming to the Space Center on Wednesday. What would you suggest?

I'd do MK for the longer day, too! Or Epcot, only because it's our favorite. Have fun! We've never travelled to Disney with less than 12 people, and have had up to 24 at one time! This trip we'll be a party of 14 (2 mo, 1y, 4y, 7y, 9y, 10, 11, and the rest adults). It's so much fun to experience it with family!
