Buttermilk Pie???

Hi guys, A friend mentioned that her DH Loves buttermilk pie. I would like to surprize him with one for his birthday. She said they have them in Texas at Lubey's (sp??) rest. I would appreciate a recipe for the buttermilk pie. Thanks for your invaluable wisdom. :)!
 
Ingredients

1/2 T Flour
2 T Lemon Extract
1 Stick Butter
1/2 c. Buttermilk
1 cup Sugar
3 Eggs
1 Standard Pie Crust


Directions

This recipe was "weaseled" out of the poor owner of the Woodbury Cafe,
on the square, in Woodbury, Tennessee around 1970. It is similar to Chess
Pie with a little more texture and a lemon taste...I like it better than Chess
Pie. Use a standard pie crust for this recipe.

BAKE at 375 degrees for 5 Minutes. Turn Down to 350 degrees for 30
minutes.

Ingredients


3 eggs, beaten
2 cups white sugar
1/4 pound butter, melted
1/2 cup buttermilk
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 (9 inch) unbaked pie crust



Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, beat together the eggs, sugar and butter. Mix in the buttermilk, vanilla and flour. Pour filling into pie crust.

Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes or until toothpick inserted in center comes out clean
 


Buttermilk pie is one of my favorites also. Here's another recipe, I haven't tried yet, that sounds good. Very unusual crust.


Buttermilk Pie in Cornmeal Pastry

Unbaked Cornmeal Pie Shell
3 eggs, separated
1 cup sugar
1 Tbls. butter
1/4 cup flour
2 cups buttermilk
l/4 tsp. grated lemon peel
2 Tbls. lemon juice
Meringue (3 egg whites)

Beat yolks, adding sugar gradually. Cut butter into flour; add
buttermilk, lemon peel and juice. Fold in yolks. Pour into 9"
Cornmeal Pie Shell. Bake in hot oven (425F.) 10 minutes; reduce
temperature to 350F. and bake 20 to 25 minutes. Cool. Pile meringue
lightly over cooled filling. Bake in moderate oven (350F.) 12 to
15 minutes.

CORNMEAL PIE SHELL: Sift together 1 c. sifted flour and 1/2 tsp.
salt; stir in 1/2 c. cornmeal. Cut in 1/2 c. shortening until
mixture resembles fine crumbs. Stir in 1/2 c. grated Cheddar cheese;
sprinkle 1/4 c. water over mixture gradually, mixing lightly with
fork. Shape into ball; flatten on lightly floured surface. Roll to
about 1/8" thickness. Line 9" pie pan; trim and flute edge. Fill
and bake as directed.
