Animal Kingdom would be your closest park if you went that evening. But keep in mind Guest Relations will close at Park Close. Disney Springs is open later (I believe midnight).

Otherwise, just go early enough to Epcot your first morning and you will be fine. The discount is worth the bit of hassle to activate them. Don’t forget to bring your passports. Have a great trip!
