Chicken, cheese, broccoli baked potatoes
Creamy chicken vegetable soup
Pepperoni pizza and green beans

I think I just need carrots (maybe broccoli) to complete these dinners. Kroger deals have been great lately, I am way under budget and my stockpile is ridiculously big.
 
This week:
Monday: kung pao shrimp and steamed rice
Tuesday: Black bean and poblano enchiladas, salad
Wednesday: Lemon garlic chicken, mashed potatoes, beets
Thursday: carbonnade, egg noodles, acorn squash and any leftover veggies we have
Friday: Boboli pizza of some sort
 
DH and I leave for Texas today but I have food pre-made in the fridge and freezer for DS2.

Thursday: Indian red kidney beans and rice

Saturday: Korean bbq (I made kimchi and radish kimchi today, so they should be fermented by Saturday. I'll probably make a side dish each day this week--one thing about korean food is it's served with lots of tiny side dishes. I find it too overwhelming to make them all at once, so I make them over time till I have 5 or 10 made up, then make the bbq)
 
Today: Cube steaks with white gravy and fried potatoes and onions

DS helped unload groceries and he tossed the Beef for the stroganoff back behind stuff in the freezer, and I could not find it to make last night. So, we ate our enchiladas last night, and I finally found the meat for the stroganoff.)

Would you mind sharing this recipe? We LOVE Indian food. I make Tikka Masala, Curry, Butter Chicken, and homemade naan on a regular basis.
I love Indian cooking, too. :) I'm learning a lot from a cookbook I bought called The Indian Cooking Course.

The dish is called rajma chawal, I think (or maybe rajma masala). We bought a package of something called "rajma masala" for a snack, and my husband liked it a lot. It was mainly kidney beans and tasted somewhat like American chili with an Indian flair to it. I'm going to try a recipe in a cookbook I just got from the library called "Vij's at Home." I've never made it--I'll let you know if it's any good. There are recipes online as well. I was also looking at this one from veg recipes of India:

We had a great visit with family in Texas and arrived home Mon. I made a quick meal plan and list on the plane and we just swung by the store on the way home from the airport.

Morning all!

I am meal prepping for the week so thought now would be a good time to post. I only prep my breakfast, lunch, and snacks for the week. It makes it so much easier on work days!

Breakfast will be precooked oatmeal with brown sugar, fruit, and greek yogurt.
Lunch will be Greek bowls with couscous, chickpeas, roasted zucchini and bell peppers, feta, and a garlic vinaigrette.
Snack will be a cheese stick

Thursday: Out with family for Thanksgiving
Friday: Kimchi Bibim Guksu

This week:

Saturday: Korean BBQ beef, rice, assorted korean side dishes (kimchi, pickled radish, "candy fish," spicy cuttlefish strips, soy potatoes, sesame soybean sprouts.) I made all the side dishes, starting a week ahead of time for the kimchi and radish as they're fermented. Used prime ribeye for the bbq beef, which was expensive but really, really good. I did this because I found 5 pounds of lost ribeye in the freezer.

Sunday: Korean bbq spicy chicken, rice, and leftover side dishes from above.

Monday: Spaghetti squash with ragu and parmesan, kale salad

Tuesday: Sichuan hot and numbing chicken, rice, kale salad (have to eat this to make room in the fridge)

Wednesday: Either eat with son at his dorm or leftovers

Thursday: Thanksgiving dinner

Friday: Turkey tetrazzini and other leftovers
