First Week in Nov 2018?

We are planning our first trip to Disney as a family (me, husband, in-laws, 2 kids ages 5 and 2) for November. Right now we are renting DVC points for Nov 5-10. However, the more I'm finding out about this week, the more it sounds like it's actually busy given Veterans Day, Election Day, Jersey Week, and the end of Food and Wine festival. As much as I was hoping to go to the F&W festival, I'd gladly skip it for lesser crowds. I think the person I'm renting from can change the reservation, so would we be better off going the following week? Or would it not make that much of a difference?? Thanks!
 
The week after Jersey Week is better during the weekdays. The following weekend gets busy again when the Thanksgiving crowds start showing up. F&W actually stretches into that week.
 
We were there Nov 2 - 11 2017 and we didn't find the crowds the be a problem, what screwed us up is that I, who planned the whole thing, didn't realize there were a series of races going on and on our MK day it took us 45 minutes to get to the park, messing up our touring plans. I wouldn't hesitate to go there that week again but I'd be sure to factor in the races. We left the Sat of the last weekend of Food&Wine, that I hear has crazy crowds.
