How do the fireworks figure into Highway in the Sky dinners that fall on MNSSHP nights? Thanks in advance!

If both events occur on the same night, the Highway in the Sky schedule will be set so that you're at the fireworks viewing area in time to watch.

Agree with above. You will get to see the show (from the observation deck at the Contemporary) if they are on the same night.
