How do I change my outgoing name in Outlook?

I'm about to choke that Office Assistant cat!!!

For one message only, I want to change our names to Dr. and Mrs. DH instead of the usual John and Mary.

I have asked the Help window a dozen different ways and nothing is working.

It's probably something easy to do, but today... it's beyond me. It's Outlook, not outlook express.

No, we don't have a signature set up... which is funny when I think about it. It took me so long to get up the courage to do the 3 kitty one here on the DIS.
