I am a BIG fan of the cheddar cheese soup at Le Cellier. And it is great for an appetizer. But the other night I started thinking how I could make it into more of a meal. So I got out all the ingredients and started making my louisiana version. First of all my wife does not like the beer taste of the soup so I added apple juice instead (I hear you could replace it like that somewhere) then I wanted to make it heartier so I boiled some potatoes in chicken broth and added them to the soup! Let me just say it made for much better soup all around. Now do i think it is better than Le Celliers ..... NO because their's is awsome... It is just a change over the usual... Just thought I would let some of yall try that new version..
