What I don’t understand is. You will complain about your food get cold while waiting for wine. But will take along time to eat the food while it’s getting cold, while finishing your conversation. Unless there is an business deal getting done, and 1.5 hour meal is a long time.

That sounds definitely odd. We've had at least two dinners at Remy and both ran well over 3 hours. Brunch at Remy was at least 1.5 hours.
