I know over the years I have seen questions about meals while at Disney. People wanting to know what to cook, what are everyone's favorites. So I decided let's try to get one thread going where these recipes, tricks and techniques could be helpful to other campers.
I know we have some good cooks here on Disboards. @Flametamr , @bama_ed, @tiggerdad, @SouthAlabama5er ,@FriendsOfEeyore, and others. I have had the honor of enjoying some of the finer cuisine served during Dismeets.
So without further delay, let's cook, smoke on.

Plate Ribs (NAMP123), cut in half. Approximately 3 lbs. Cooked in a Vertical Pellet Smoker. Smoke setting for 3.5 hrs, cooked at 225 degrees for 3.5 hrs, then cooked at 275 degrees for 30 minutes. Rested for 30 mins and served. Seasoned with Salt, Granulated Garlic and Onion Powder. Competition Blend Pellets.
 
Wow, that is a lot of meat for ribs!

Reminds me of something you would see on the Flintstones. Looks great man!

Yes they are the plate ribs, a lot more meat than the typical short ribs that are sold in stores and priced accordingly. That was only half of the plate, will smoke the other half on another weekend.

Kid favorite, on a griddle, i have the blackstone. Flat bread pizza. Olive oil on the grill, flip bread to absorbe it on both sides. Warm one side then flip it over. Add tomato sause from a can ( not spaghetti sauce). Sprinkle, salt, pepper, garlic powder( not salt) , oregano and parmesan cheese, top with sliced mozzarella cheese. Fresh mozz if you prefer( then you need the dome thing to help melt it), add toppings as you like, easy , fast and the kids like it.
 
For dinners I have two easy, fast one plate meals that are a staple with almost every camping trip. Grilled chicken Cesar salads and spaghetti w/meat sauce. I use boneless skinless chicken tenderloins which grill super fast, bagged salad mix and add dressing, cheese & croutons. For spaghetti, I premake sauce at home, so it just needs reheating and then cook the noodles. Both dinners are cooked and ready to eat in about 15 minutes.

Did not mean to rub it in. I just wanted to create a thread for campers to share recipes. It makes no difference to me if you cook it in tin foil or on an expensive grill. One can smoke on a regular grill and I used to, it just requires more attention. All that matters in the end and the concern of the thread, is does it taste good, IF so then share it.
 


I have been trying as many recipes as possible using the instant pot (electric pressure cooker) because they are usually fast and easy, so some have been tried at home to see if they will make the cut for future camping trips and some while camping. I'm always looking for things I can make while camping so am happy to see this thread.

I will say my camping food is mostly geared toward quick and easy and the appease the palate of 10, 7 and 3 year olds. Generally all my cooking is done using a toaster oven, instant pot and electric skillet. Hoping to get rid of the electric skillet as the finish is getting worn and add Blackstone griddle.

sour cream pork chops, tried once and worth having again, next time might try a quick release of steam immediately instead of 5 minutes slow release. made at home but would have been easy enough/the same in the camper

mississippi roast- so good. I haven't made it while camping but make it often at home in the crock pot, will probably make on our next trip in the instant pot using the slow cooker function.

Other quick and easy dinners usually include make your own pizza with pre-made store bought personal crusts, trader joes orange chicken and chicken fried rice.

There are a couple of us that have blackstone griddles. We have a 17 inch that travels with the camper. I know some other folks went with the 22 inch.
Recipes look great, yes we are always looking for quick and simple for camping.
 
The insta pot ribs were not bad at all, i used my own rub and there times. The mac and cheese was so so. I can probably improve upon it. But all in all not bad to do while camping. ( i tryed it at home). I would not want to clean the insta pot after making the mac and cheese on a site with no sewer hook up.

Do they make liners for the instapot ? I know they make them for crockpots. Just curious as this would save from a sticky pot.
 
Cleaning an instant pot or Crock pot while camping is not fun! Did that at 4 Mile Creek State Park this summer and it was not fun! I know they make liners for Dutch Ovens...they may fit in the instant pot.

I'm looking for some great Dutch Oven recipes. I just got one (not bringing it to Disney next week though - too much TE to eat) but as someone who often travels alone I'm looking for some smaller sized recipes.

We have the 22 inch Blackstone that stays with the camper. You can cook just about anything on it :thumbsup2 :thumbsup2 We still keep an electric skillet on hand for things like gravy or sauces.

I picked up a 22” Blackstone griddle for last weekend because my grill kicked the bucket.

I need practice to not burn one side of everything.
