We're supposedly going on a "slow" week- why are so many resorts showing as sold out?

I agree with PP that while the resorts may be full, it doesn't necessarily mean the parks will be. Promotional offers may entice people to stay onsite that would normally stay offsite, and conventions/traveling groups will be present as well, which take up room inventory but don't necessarily impact crowds in the parks.
 
Also, this is during the Gift of Magic room offer dates. It's possible the system is only checking that promo for rooms and since there are a limited amount of room available for the promo it looks like there is no availability. If you are looking online make sure you slide the top blue bar over and check under packages as well as regular room rates. It will likely open up availability, but the rates will be rack rate.
