Potato Candy
Sift and measure 3 1/2 c. powdered sugar
Put 2 c. of the sugar in a bowl
Add 1/4 c. dry mashed potatoes (that means no milk added)
1/4 c. cremora
1/4 stick of soft margarine
1 tsp vanilla
dash of salt
Mix thoroughly adding sugar as needed to make a dough stiff enough to roll. Knead a little then roll into a rectangle about
8" x 18". Spread generously with peanut butter. Roll. Chill and cut into slices. (The amount of sugar varies with the wetness of the potatoes.)
