Cheap and Easy Casserole...

Must be a UP thing? I know I grew up on this stuff, but when I married I did not marry a UP native and he really doesn't care for it....
 
This sounds yummy! I'm definitely going to try this one. Do you use frozen ravioli? or fresh?

Frozen and the last time I made it I saved time by not boiling them first and it still came out fine. I used then right out of the freezer.:thumbsup2
 
Brown ground beef, in a large pot boil wide egg noodles after you drain the noodles pour the ground beef in the pot with the noodles and add a can of mushrooms, 15oz tomato sauce, 2tsp of margrine, a little sugar some salt & pepper stir up and cover with 2 or 3 cups of shredded chedder cheese turn off the stove & cover the pot so that the cheese melts over the noodles.

Tator Tot Casserole

Cook your meat first(I use ground turkey or ground beef, about a pound)

Pre-heat your oven to 350

Layer your meat in the bottom of a 8x11 casserole dish. Next comes a handful or two of shredded cheese. Then you add soup. ( you can use any *cream of* that you like. I use cream of broccoli or cream of mushroom or cream of chicken. Sometimes mixing 2 kinds, but you need 2 cans) Then you make neat little rows across of tator tots. Bake for about 45 minutes til soup is bubbly and tots are golden.

There are variations of this that you can do. Sometimes I'll add taco seasoning to my meat and then use corn and cheddar cheese or nacho cheese soup. You can also add salsa if you like. Don't use too much cheese or it'll be too much with the soup. I usually add only about a cup. You can also use a bit more meat (like 1/2 lb) and then make a 9x13. That goes farther cause you're adding more tots and just making the layers thinner. YOu don't have to use more soup, just tots and meat.
 
WOW! You guys rock! Thanks for all the great ideas. I've done the chicken pot pie type one before- I usually make it the day after we have had baked chicken- I pick the rest of the chicken off,combine with the soup and veggies in a baking pan and put biscuts (cheap little ones that come in a can) on top and bake.

Now I have to make a grocery list for the items to try these others!

you need:

2 Cans of Tuna fish
2 Cans of Cream of Mushroom Soup
1 Can of Peas
1 box of Pasta or egg noodles
1 bag of potato chips - crush the bag

OK cook the pasta or noodles

In a casserole dish in layers 1st past then 1 can of tuna then 1/2 can of peas a layer of crushed chips then 1 can of mushroom soup - i add a bit of milk to the soup in a bowl and they layer it on top then the next and last layer - rest of pasta can of tuna rest of peas and then top with the chips and at last the can of soup......

Bake at 350 for about 1/2 hour covered then the last 15 minutes or so i uncover

Here's another tuna casserole. I tried it for the first time last night and it was pretty good.

1 can cream of celery soup
2 cans tuna
1 cup of cooked peas
1/2 cup milk
2 cups cooked egg noodles
2 tbsp dry bread crumbs
1 tbsp melted butter

Mix soup, milk, peas, tuna and noodles in a casserole dish (1 1/2 or 2 qt). Bake at 400* for 20 min, then take out and stir. Mix bread crumbs and butter, then sprinkle on top and return to oven for 5 min.

Not a casserole exactly but kids love it and my father does too.
1 bag of ore ida extra crispy tater tots
cheddar cheese or any cheese you love
grilled chicken breast sliced or shredded

cook the tots and the chicken and layer the ingredients in a bakeing pan cook at 350 until golden brown and cheese is melted

Chicken Casserole
Crush 1.5 sleeves of Saltine crackers and mix with 1 stick melted butter or margarine (you can decrease this amount to enough to moisten crackers if you want to be healthier, but it is tasty with all that butter).
Put most of this on bottom of greased 9x13 pan, keep out about 1/2 cup. Heat one can chicken broth and mix in one can cream of chicken soup. Cool and add about 1/2 cup of sour cream and mix well. Drain and pour one or two large cans of chunk chicken over cracker crust. I like to sprinkle well with garlic pepper at this point. Then pour soup mixture over and sprinkle reserved cracker crumbs over top. Bake at 350 for about 20 minutes until crackers browning. Totally comfort food!

Chicken and rice casserole
Mix one can cream of mushroom soup, one soup can of milk, one can of chunk chicken (I kind of shred it), one can of mushrooms including water and one packet of Lipton Dry soup mix, Herb and Garlic flavored (I prefer H&G, but if you can't find can use Onion flavor). Mix, pour in 9X13, cover and bake I believe at 375 for about an hour, remove cover for last 10 minutes. This rice stays somewhat al dente.

Cabbage rolls without the rolling
Mix about 1 to 2 cups of cooked rice (do to your preference) with a pound of leaner hamburger, salt and pepper to your liking (or I prefer Cavander's Greek Seasoning) and a small to med onion finely chopped. In separate bowl, mix 2 cans of tomato sauce with about a tablespoon or two Worchestershire. In crockpot, layer a third of a small cabbage (I just slice it up). Then a layer of meat mixture. I pour tomato mixture and Greek Seasoning (or Salt and Pepper) over every layer. I usually get 3 layers of cabbage and two of meat. Prefer to cook high for an hour or two and low the rest of day, but if start early in day, can cook low all day.

Sorry some of my measurements aren't exact, but I don't measure, just do to your liking. These are hard to messup.
I made the cabbage "roll" casserole yesterday with a couple of modifications, it was wonderful and low carb....

i left out the rice and added italian seasoning (basil is best for lasagna type dishes) and layered thickly cabbage leaves, then meat-sauce-ricotta cheese mixture, four layers, topped with mozerella cheese and baked in crock pot on low all day long..fabulous............
 
Here's my Taco Casserole recipe:

1 1/2 lb. hamburger
1 C. chopped onion
1 14 oz. can diced tomato
1 14 oz. can black beans, liquid drained
1 C. frozen corn
1 pkg taco seasoning
1/2 c. sliced olives (optional)
1/2 C. shredded cheddar cheese and 1/2 C. shredded monterey jack (or all of either one)
6-8 oz. cooked egg noodles

Boil egg noodles for recommended time. Brown hamburger meat and onions, drain fat. Sprinkle on taco seasoning, add tomatoes and juice, black beans, and corn. Simmer for several minutes. Combine noodles and hamburger mixture, mix in half of cheese, and sprinkle rest on top. Sprinkle with olives if desired, bake at 350 for 20 minutes. Can serve with sour cream if you like.

My husband and kids really like this (I wouldn't know, since I'm a vegetarian, although I have plans to try it with 'fake' meat!)

We love tater tot casserole.

We do a variation of this but we add a layer or brocoli or green beans on top of the meat and since we have a member who does not like tater tots we use the wal mart home style hashbrowns (the little cubed breakfast ones not shredded). Very much a favorite here. Oh and we put the cheese on top at the end of cooking so it gets brown and crunchy up top. YUMMO!
 
Enchilada Casserole

1 lb ground beef
1 can cream of mushroom soup
12 corn tortillas
2 cups chedder cheese
1 can red enchilada sauce
1 can green chilis
1 small bag of Fritos (optional)

1. Brown ground beef and mix in soup and chilis.

2. Layer casserole dish with corn tortillas, top with half of meat mixritre, and then add half can of sauce and cheese.

3. Add another layer as above and top with cheese and crush Fritos.

4. Bake at 350 until cheese is melted and casserole bubbles.

I can throw this together in about 20 minutes and it tastes so good! People always want the recipe!

This is quick meal that you can make ahead and freeze. My family really enjoys it:thumbsup2

Taco Bake

1 lb ground turkey
Minced onion
1 envelope of Taco Seasoning
¾ cup of water
1 15oz can of tomato sauce
1 box medium pasta shells, cooked and drained
2 cups cheese

Cook ground turkey and onion. Add tomato sauce, water, and taco seasoning mix. Bring to a boil and then cover and simmer for 20 minutes. Add pasta and 1 cup of cheese to meat mixture. Sprinkle remaining cheese on top. Bake at 350 degrees for 30 minutes.
 
This is something that I have created, don't really have a name for it, but it has tater tots, kielbasa and corn if you choose.

I use 3/4 of bag to a full bag of tater tots, put them in casserole dish and baked as directed, usually at 425. The directions usually call for cook the tots 10 minutes, flip and cook an additional 10 minutes. After cooking the tots the first 10 minutes, I take them out and mash them so they look like a hashbrown.

I then take 1 pkg of Hillshire (or whatever brand) kielbasa and cut itup into bite size cubes. I add them to the mashed tots add a little olive oil, salt/pepper and parsley and put them back in the oven to cook the remaining 10 minutes, but I tend to cook for 15 because I like the tots to be a little crispy.

I have also added frozen corn to this casserole and when I have I put it in when I put the kielbasa in.

My family likes this.
 
Here is an easy new recipe I used this weekend. I throw in anything as long as it's veggies. I got it from kraft book and changed it to make it more lowfat but will list as from the book

5 eggs or quarter carton of egg beaters
1 cup milk(I use 1% or skim)
1/2 cup of sour cream(I use low fat)
1 pkg frozen broccoli(I didn't have any so I used frozen chopped spinach drained)
1pkg stove top stuffing for chicken(I used the cornbread stuffing)
9 oz boiled ham(I used the rest of a ham I had from a few days prior)
1 cup of cheese(used 2%)
**I also used a can of mushrooms and some chopped tomatoes

Preheat over to 375. Beat eggs, milk and sour cream with a wisk. Add the veggie, dry stuffing, ham and half the cheese. Mix enough to get all the stuffing damp.

Pour into a 2qt or 9in pie pan baking covered with foil for 1 hour and then uncover and top with the rest of cheese and bake an additional 5 mins or until melted.

I'm not a big egg eater but with the stuffing and other stuff it made it more pleasant but at times it did taste really eggy.
