Cheap and Easy Casserole...

Pizza Noodle Casserole

1/2 (12oz.) pkg. egg noodles, cooked
1 lb. hamburger
1 small onion, diced
2 cans tomato soup
1/2 cup parmesan cheese
1 tsp. oregano
1 tsp. garlic salt
1/2 tsp pepper
1 (12oz.) bag of mozzarella cheese

Brown hamburger and onion, drain off fat. Add soup, parmesan cheese, and spices. Simmer for 10 minutes. Add noodles and put in casserole dish. Top with mozzarella. Bake in 350 degree oven 30 minutes covered and 15 minutes uncovered.

I add whatever pizza ingrediants I have on hand - mushrooms, olives, pepperoni, etc. My kids love it and fight over the leftovers. :thumbsup2
 
Layer in this order......

4 chicken breast shredded, put on bottom of 9x13 pan
Bag of DORITOS, put on top of chicken
Can of corn
Mixture of 2 cans favorite cream of soup, one can of Ro-tel Tomatoes and one cup milk
Top with shredded cheddar or favorite cheese

Bake at 350 for 30 minutes.

Few tips. You can use a whole chicken, just simmer until tender and shred off the bone. I used frozen corn that I thawed out. And we found the Ro-tel to be a bit spicy, which we like normally, but for this recipe it seemed a bit too flavorful. Will try the milder one next time.
 
pjlla - I too have a weight problem. I do the following.

1. Use low fat when it doesn't affect the overall recipe.
2. Don't eat casserole all the time, once every week or two.
3. Serve with vegetables so you are eating a smaller serving size of the casserole.
4. Decrease the amount of the bad stuff (or maybe that is the good stuff :rotfl: ) if it won't affect the recipe.
 
Anyone have a tator tot casserole recipe? (I am VERY cooking challenged so please spell it out like you were talking to a toddler :lmao: )

Not a main dish, but side dish that everyone raves about. I take this everywhere and people just love it.

1 bag tator tots
Mix 2 cans cream of soups, 16 oz sour cream and 8 oz cheddar (or more if you want). Pour over the tots and mix well. Bake in 9x13 pan.

Bake for 30-45 minutes at 375. You can really do any temp. It is done when nice and bubbly and brown.
 
I have one that is kind of a casserole.

Mexican Burrito Filling

in a 9x13 layer the following(spray with Pam first)

1 large (or 2 small) cans refried beans (thin layer on bottom)
1 1/2 pound ground beef (cook & drain first)
rest of the beans
1 small onion (can be raw or cooked...your taste)
2 cans ortega chilies
cheddar cheese
top off with 1 large (or 2 small) cans GOOD red enchillada
Bake uncovered at 350 for about 30-45 minutes

You can fill flour tortillas with it. We do this on day 1 and with leftovers we eat as a dip.
 
I made up this recipe after having this served to me in Sweden. I call it Skane pork (the region we were in), pronounced skoanah.

Place in crockpot pork roast. Sprinkle packet of roasted pork gravy (the dry stuff) and dump can of enchilada sauce on top (I like the medium for hotness), and also a little fresh ground pepper. Cook on low till it shreds easily and serve over rice.

After dinner return the leftover pork to crockpot, turn on high, and add some brown sugar till it begins to taste like BBQ pork. Serve as leftovers on hamburger buns.

I love this because I get two very different meals with very little effort.
 
I tried feedindy's Cheesburger Casserole (on Page 1) the other night and it was sooo good! I didn't use the whole jar of spaghetti sauce..just about 1/2 cup because I thought it would be too soupy. I didn't have reg. sauce so I used Paul Newman's Cabernet Marinara. I mixed the cheese through the casserole and topped with a small can of crescent roll dough. OMG! Yum. Even my 11 yo DD who rarely likes what I cook loved it! There was none left. I'll defintely make it again!

But i only have 1/2 amount of sour cream (left overs) and 1/2 the cheese so i'll just use 1/2 bag of tator tots and 1 can of sour - that with my chicken legs in the crockpot now will make a simple dnr for tonight!

my DM use to make this tater tot casserole for my DB.


You take a square corning ware bowl. I want to think its around 2 qts.

You spray it with pam and then press raw ground beef around the bowl so that you have a bowl of ground beef.

Mix 1 can green beans drained, 1 can cream of something soup and 1/2 soup can of milk and add to the ground beef bowl.

Top the pan with tater tots so you have a layer of tater tots over the whole bowl.

Bake about 30 mins at 350 until its hot and bubbly.

I never liked it, but my DB would eat the whole pan himself!
 
great thread! I don't think I've seen any shepherds pie on here yet? I had a "revelation" a few years back and now this is one of my quickest fixes on a busy day/night.

I used to save shepherds pie for left over "real" mashed potatoes.

not anymore!

I also brown my ground beef (or whatever you eat ground!) ahead of time and freeze it in 1 lb. servings. cheaper to buy 5 or more lbs at a time.

so here it is.

1 pound cooked frozen gr. beef
1 package brown gravy
1 packge onion soup mix (both pkgs dry)
1 can whole kernel corn with enough water to make about a cup of juice (I usually just dump a can water in?)

put on med hi heat on stove top.

mix up a box of instant mashed potatoes (garlic flavored are good, kind of hides the instant thing) 5 minute to boil water, 2 minutes to mix in flakes!

plop on top of bubbly meat mixture and stick whole pan in oven on 400 for 15-20 minutes. (oh! makr sur you use a skillet that is oven safe of c ourse. . hehe)

by time you are done setting table and pouring drinks, it's time to eat!
 
I have two:

Taco Casserole...

1lb. Ground beef(cooked and drained)
1package Taco seasoning(add 3/4 cup water and put w/ hamburger in pan)
Simmer above mixture for about 10 minutes....
Remove from pan place in casserole dish and add....

1 can corn
1 can kidney beans
1 can ro-tel tomatoes
1 package cheddar cheese

Mix it all together. Top with crushed doritoes and more cheddar.
Bake at 400 degrees for about a half hour and eat.

Shepards Pie:

1lb ground beef
1 can corn
1 package cheese(whatever flavor you like)

Mix above ingredients together and spread in a 9x13 baking dish.
Top with last nights mashed potatoes and sprinkle with parmesean cheese.
Bake at 375 degrees for 30 minutes and eat.

that is my contribution to this great thread(which I have put in my favorites for future reference, lol)

Pizza tot cassarole
Brown 1 pound of ground beef or turkey. Mix with 2 cans of italian tomato soup ( or regular tomato with some added seasnoing) Put in a 9x13 pan. top with mozzarella cheese and a bag of frozen tater tots. Bake at 400 for about 30 minutes until browned. My kids love it.

Cheeseburger n' fries casserole
Brown ground beef 1-2 pounds. Mix with one can cheddar cheese soup and 1 can golden mushroom soup. Put in 9x13 pan and top with crinkle cut fries. bake at 400 for about 30 minutes until golden brown. Yummy.
 
I have been thinking of doing more casseroles and just drew a complete blank. JUST spent over 1 hour googling casserole recipes and NONE of them sounded half as good as the ones posted here!! I am going to try several recipes over the next week or so and post my results here..THANKS for everyone who took the time to post!!

Here is the absolute favorite casserole I make, I actually made it up for a home-ec class in 1985, it is still a pot-luck favorite..hope you enjoy

Chicken Enchilada Casserole

Approx. 4 cups cooked cubed chicken (white and dark prefereably)
2 cups Minute rice (cooked)
1 large jar of Pace Picante Sauce
1 can of chicken broth
1 can cream of chicken soup
1/2-1 cup of sour cream (to taste)
1 can mild green chili's (or 2 if you like..I use 2)
1/2 tsp each of -garlic salt, salt & pepper
10-12 corn tortillas
1 -2 lbs lb grated colby cheese (or colby jack, or cheedar if you prefer)
1 bag fritos or doritos


In large bowl combine chicken, minute rice, Pace, chicken broth, soup, sour cream, green chili's and seasonings. (this mixture will look an off pink color and not smell very good, but TRUST me, that is how it is suppose to be)

Spray bottom of glass casserole pan with non-stick spray, and if possible, a little diluted soup or chicken broth on bottom to prevent "hard" tortillas.

Layer corn tortillas (slightly overlapping) to cover bottom of pan. Spread 1/3 of chicken/rice mixture COMPLETELY over tortillas, top with cheese. Repeat layers until chicken mixture is top layer and covered with cheese. Cover with foil and bake approx. 25-35 minutes or until bubbly. Take off foil and bake an additional 10-15 minutes until all sides are bubbling and cheese is melted and lightly browned. Top with lightly crushed Fritos, or omit Fritos from top and serve as a side.

Serves 4-8 ENJOY
 
This one is soooo simple and I came up with it when I was planning to make soft shell tacos and forgot the tortillas!

Mexicali Stroganoff

1 box mac and cheese, prepared
1 lb. ground beef or turkey, cooked, seasoned with a packet of taco seasoning
1/3 c. sour cream

Cook and mix! My DH actually really liked it! I did too...didn't think it would come out so tasty!
 
rice-a-roni casserole (That's what my boys call it)

1lb ground beef ...cooked and drained
2 boxes beef flavored rice a roni...brown according to box directions
add water (according to box), ground beef and 1 can of green beans
cover, reduce heat and cook 20 mins

the boys would eat this every day for weeks if I would let them.

The 2 box method serves 4-5 large servings. Add 1 box and another can of beans for 2-3 more servings.

Lessons learned-
the kids like french cut beans better than whole beans
browning the meat and rice together did not work...sticky goopy rice!! (Yuck!)
using 1 pan to brown rice and another to brown meat at same time saves valuable minutes (of baby screaming for attention)
soy sauce is good!
 
Here is a great one....cheap and easy....

Cheesy Tortillini

1 bag frozen cheese tortillini
6-8 slices of deli ham (sliced into strips)
1 cup frozen peas
1 jar Alfredo sauce (like Ragu)
1/2 cup Parmesean Cheese

Spray a 9x13 pan with Pam. Pour in frozen tortillini, frozen peas, ham strips and Alfredo sauce. Mix to incorporate sauce well. Cover with foil and bake for 20-25 minutes on 350. Take off foil, stir well, sprinkle with parmesean cheese and return to oven for another 10 minutes....Serve with a bagged Caesar salad and bread......YUM!!!!
 
Enchilada Casserole

1 lb ground beef
1 can cream of mushroom soup
12 corn tortillas
2 cups chedder cheese
1 can red enchilada sauce
1 can green chilis
1 small bag of Fritos (optional)

1. Brown ground beef and mix in soup and chilis.

2. Layer casserole dish with corn tortillas, top with half of meat mixritre, and then add half can of sauce and cheese.

3. Add another layer as above and top with cheese and crush Fritos.

4. Bake at 350 until cheese is melted and casserole bubbles.

I can throw this together in about 20 minutes and it tastes so good! People always want the recipe!

I made this last night and it was very good. I did a few minor adjustments (to suit my families taste) by adding a little sour cream and black olives. I think next time I might add some spanish rice to make the dish a little less "heavy". Don't get me wrong..it was VERY tasty, but I felt HORRIBLY guilty afterwards, and..I know I am crazy...but just have rice in it would absolve my guilt:lmao: :lmao: :rolleyes1
 
Since I'm making this tonight, thought I'd post. It is not a casserole, but it is quick, easy and delicious. My whole family loves it!!

15 Minute Corned Beef & Cabbage

1 can corned beef
1 small head green cabbage
1/2 lb bacon
2 tbs butter
Salt & pepper to taste

Cut bacon into small pieces (about 1" long). Brown bacon in large and about 2" deep frying pan until very crispy. Take out bacon drain on napkin, leaving grease and drippings in pan.

Add butter until just melted.

Cut head of cabbage into small wedges (8-16 wedges out of whole head). Stir wedges until well coated by bacon drippings season w/salt & pepper to taste. Cover and let simmer for about 5-10 mins. Once cabbage is tender, "chunk" pieces of corned beef into pan (open can and just pull off chunks). Let simmer just until warmed (2 mins) and it is done.

I always serve this with boiled potatoes too, it is REALLY good!!
 
I am cooking challenged. I mean REALLY challenged :sad2: but this thread has given me confidence and motivation to get in the kitchen and be brave!
