Cheap and Easy Casserole...

these are great! I have tried 2 of these receipes and they have turned out wonderful!
 
Here is a great one....cheap and easy....

Cheesy Tortillini

1 bag frozen cheese tortillini
6-8 slices of deli ham (sliced into strips)
1 cup frozen peas
1 jar Alfredo sauce (like Ragu)
1/2 cup Parmesean Cheese

Spray a 9x13 pan with Pam. Pour in frozen tortillini, frozen peas, ham strips and Alfredo sauce. Mix to incorporate sauce well. Cover with foil and bake for 20-25 minutes on 350. Take off foil, stir well, sprinkle with parmesean cheese and return to oven for another 10 minutes....Serve with a bagged Caesar salad and bread......YUM!!!!

just went out shopping this afternoon and bought everything - even the bagged salad and bread!

i'll let you know how it went over!

Not a main dish, but side dish that everyone raves about. I take this everywhere and people just love it.

1 bag tator tots
Mix 2 cans cream of soups, 16 oz sour cream and 8 oz cheddar (or more if you want). Pour over the tots and mix well. Bake in 9x13 pan.

Bake for 30-45 minutes at 375. You can really do any temp. It is done when nice and bubbly and brown.


Made this last night while filiming my Disney Dream Job entry..everyone really enjoyed it, including me. Next time, I would cut the amount of sour cream in half and add a medium cheddar, but it was YUMMY!!!
 
I made the tator tot recipe someone else listed and it was great but I did add some onion, bell pepper, and mushrooms to the ground turkey and half the cream soup mixed in then a bit of cheese on top. After I put the tater tops on the ground turkey, I put the rest of the cream soups and some more chesse and baked until crispy. It came out wonderful. Great comfort food!
 
I made the Enchilada Casserole and we all loved it (except for picky DS13 who didn't like the enchilada sauce :rolleyes: ). Thanks for sharing the recipe with us! :thumbsup2
 
Dinner time...bumping along....

Tried this one and the kids gave it a thumbs up:
1 pkg instant Chicken stuffing mix (6oz)
1 & 1/2 lbs boneless skinless chicken breasts cut into 1 inch pieces
1 can condensed cream of chicken soup
1/2 cup sour cream
1 bag (16oz) frozen mixed veggies thawed and drained

Preheat oven to 400.
Prepare stuffing mix as directed on package and set aside
Mix chicken, soup, sour cream and vegetables in 13x9 baking dish & top with stuffing.
Bake 30 minutes or until chicken is cooked through.
 
We call this Thanksgiving casserole.
It is a combination of two recipes from Kraft Food and Family. This is the best magazine for easy recipes.

Preheat oven to 350 degrees

4 cups chopped cooked chicken or turkey
1 can cream of chicken soup
1/2 lb Velveeta
1 package Stove Top stuffing prepared as directed on package

Mix everything but the stuffing together in a 13x9 inch baking dish. Then put the stuffing evenly on the top. Baked for 30 minutes.

I always serve cranberry sauce with this, and all of my kids like it!

This is not a casserole but it is super easy and one of my family's favorites...It can be a low fat/low calorie meal too.

Sweet and Sour Chicken

4 - 6 boneless skinless chicken breast
1 bottle catalina or red french dressing (the regular size bottle) I use fat free
1 jar apricot preserve (regular size) I use All Fruit
1 package dry onion soup mix

preheat oven to 350.

Place chicken in a baking dish. Bake for 30 minutes. Drain off juice.

Mix dressing, preserve and soup mix and pour over chicken. Bake another 30 minutes.

Serve with rice...I also serve it with broccoli...the sauce is great...we would drink the stuff!

I have a great tater-tot casserole too, that sounds similar to those that have been posted. This is a family favorite!

Beef Potato Casserole

1lb Ground Round
1 1/5 packages of Tater Crowns
10oz package frozen chopped Broccoli
2 cans Cream of Celery Soup
1 cup shredded Cheddar Cheese
2.8 oz can of Durkee French Fried Onions
Salt (to taste)
Pepper (to taste)
Garlic Powder (to taste)
2/3 cup Milk

Line 13x9x2 pan with tater crowns, on the bottom and one row high along the sides. Bake at 400 degrees for about ten minutes.

Brown ground beef, drain and mix in thawed broccoli and half a can of onions. Add beef mixture to the tater crown "shell". Mix soup with milk and add 1 cup cheese and spices to the mixture. Spread on top of beef.

Bake covered at 400 degrees for 20 minutes. Top with remaining cheese and onions and bake uncovered 2-3 minutes longer.

This is much easier than it sounds, because you can be doing one thing, while another is cooking. For instance, while the meat is browning, the tater crowns are browning in the oven and I'm mixing the soup mixture.

I just started eating heart healthy (ie-low fat, low cholesterol) and this recipe may work for you:

1 lb ground meat (originally beef, but I've also used chicken, will try turkey next)
box of pasta (I've used penne, wagonwheel)
jar of salsa
mexican cheese

First brown the meat and drain off all fat. Once meat is browned, add jar of salsa to meat and let simmer. Cook pasta like normal. Once pasta is cooked and drained, top with the meat/salsa sauce. Sprinkle a little (heart healthy;) ) or a lot of mexican cheese on top. Voila! Dinner is served!
 
Poppy Seed Chicken Casserole

1 whole chicken, cooked and cut into bite-size pieces ( I usually use about 6 to 8 breasts)
2 cans of cream of chicken soup
1 (16 oz) carton of sour cream

Topping:
3 Tbsp. of poppy seeds
1 tube of Ritz crackers, crumbled
1 to 2 sticks of butter or margarine, melted

Directions: Combine sour cream, soup and chicken. Layer topping on bottom, then 1/2 chicken mixture, topping, rest of chicken mixture, ending with topping. Bake at 350° for 1 hour.
