Cheap and Easy Casserole...

We tried this recipe my DSIL gave us last weekend, really good:

1-2 lbs chicken in bite size pieces
Cover that with mozzerella cheese slices
Cover that with a mixture of 1 can cream of chicken and 1 can of mushroom soup mixture (no water, just the soups)
Cover that with a mixture of one box of Stove Top Stuffing (we used chicken flavor) mixed with one stick butter

Cook at 350 for 45 minutes

It was SO good and very quick!
 
Here is one my little brother cooked for us the other night...

Box of Kraft Mac and Cheese (the kind with the sauce, not powdered)
1/2 Cup Cheese
1 Pound Hamburger or Sausage (or any other meat for that matter would work I would assume)
1 Jar/Can Spag Sauce 14oz.

Cook meat and drain. Meanwhile cook the Mac and Cheese and prepare as directed on the box.
Add the Spag Sauce to the meat. In a square pan layer the mac and the meat mixtures, when done top with the cheese. Then bake on 375 for 15 minutes or until cheese is browned.

You could also put this in the fridge after layering and heat it up that night, we did this as well, 375 for about 30-35 minutes, covered with foil.

Thanks for posting....I only have *1* other dish that I make that everyone in the family really enjoys...my kids LOVED this, (even DD13 AKA ms. picky) as well as both my husband and I. This is a very yummy comfort food type dish.:thumbsup2
 
Pizza Bake Dish-1lb ground beef-browned,1 jar pasta sauce (i use prego),2 c macaroni (cooked),1 can cream of (your fave) soup,8oz of shredded cheddar cheese...mix all but cheese together,..13x9 baking dish..layer hamburg mixture then layer of cheese,continue till hamburg mix. is gone..top w/remaining cheese..bake at 350 for 30-45 min (should be a bit bubbly)


Beef Taco Bake-1lb ground beef(browned,1 can tomato soup,1 cup chunky salsa,1/2 cup milk,6 8inch tortillas cut into 1 inch pieces,1 cup shredded cheddar or mexi mix...too drained browned beef add soup,salsa,milk and tortillas and half of the cheese..pour into 2qt shallow baking dish..375 30 min..sprinkle with remaining cheese....note*sometimes i add a can of refried beans to bottom of baking dish then add the beef mix on top,also add black olives...dollop of sour cream when served

Chicken Broccoli casserole-1 can crm chicken soup,1/2 to 1 cup milk,2-3 cups cooked carrots and broccoli,2 cups cooked cubed chicken,1 can (2.8oz) French Fried onions...in casserole dish mix soup,milk,veggies,chicken and 1/2 can of onions.Bake at 350 30 min or until hot,sprinle with remaining onions.bake 5 more minutes

Hash Brown supreme-2lbs hash browns(thawed),3/4 stick butter or margarine melted,1/2 cup chopped onion,8oz shredded cheddar cheese,8oz sour cream,1/2 tsp salt,1/2 tsp garlic powder..topping-2 cup crushed cornflakes,3/4 stick butter or margarine melted.....combine all ingredients except topping in a large bowl.mix and pour into a 13x9 pan..mix topping ingred. together and spread over hashbrown mix..bake at 350 for 1hr..serves 10,leftovers can be frozen

Enchilada Casserole

1 lb ground beef
1 can cream of mushroom soup
12 corn tortillas
2 cups chedder cheese
1 can red enchilada sauce
1 can green chilis
1 small bag of Fritos (optional)

1. Brown ground beef and mix in soup and chilis.

2. Layer casserole dish with corn tortillas, top with half of meat mixritre, and then add half can of sauce and cheese.

3. Add another layer as above and top with cheese and crush Fritos.

4. Bake at 350 until cheese is melted and casserole bubbles.

I can throw this together in about 20 minutes and it tastes so good! People always want the recipe!
 
1 box your favorite Rice-A-Roni
1 Lb your favorite pre-cooked meat
1 cup tiny cut broccoli (raw)
1 cup tiny cut cauliflower (0r two cups your favorite veggies)

Follow the directions on the back of the Rice-A-Roni box.
When you get to the part where you simmer the Rice-A-Roni for 20 minutes add the veggies and meat. Awesome and delicious. It can be used in so many variations, sometimes we use sausage and make it Cajun, beef and broccoli, chicken and what ever veggie we want!
 
I am really enjoying this thread. I have a group home for handicapped adults, most with few or no teeth so we love casseroles. I will be trying several of these.

I did find a new one the other day that we really liked.

SourKraut Hot Dog Casserole

8 slices Bacon (cut up into 1 inch pieces)
1 medium onion (cut up)
1-2 pounds hotdogs (cut up into 1 inch pieces)
Bag of Sourkraut (drained and rinsed)
Instant Mashed potatoes (Prepared)
1/2 c butter, melted
Paprika

In a frying pan fry bacon and onion. Drain fat. Add hotdogs. Continue to fry for a few minutes to season the hot dogs. Add sourkraut.

Pour into greased 9 x 13 cake pan. Top with a nice layer of mashed potatoes. Pour butter over top. Sprinkle with paprika.

Bake at 350 degrees for 30 - 35 minutes until hot.

Realize that I never measure and I add things at will. Since I cook for so many all the time it is rarely the same twice. I'm pretty sure that I added a little brown sugar to the meat mixture in this one.

This really was a delicious hotdish. My crew loved it and is begging for it again.
 
These are super easy and fast.

Chicken nugget casserole:

Layer casserole with chicken nuggets or chicken strips
Coat with grated parmesano
Cover with spaghetti sauce
Add shredded cheese ( I use a mix of mozzarella and fresh parmesan, but any cheese will do)

Bake for 25 - 30 mins. at 350.

Rotel Chicken

Boil chicken
In the mean time layer casserole with Chili con Carne Frito's or any crunchy chips
shred chicken, put on top of chips
dump 2 cans cream of chicken on chicken
Pour on a can of rotel, not drained
slice velveeta and put on top. I use lots of velveeta, love it cheesy

Bake for 20-25 mins at 350 or until the cheese is melted.


Both are sooo good.
 
Beef Enchilada Casserole Makes 12 servings
This wonderful dish can easily be made ahead and frozen, so don't let
the large number of servings frighten you. Your family will love it as much
as you will, so you'll be glad you have extra for another meal.
Ingredients:
2 cups canned red chili sauce
2 tablespoons all-purpose flour
4 cups low-sodium tomato puree
1 1/2 teaspoons mild or hot chili powder
15 ounces lean ground beef (10% or less fat)
1/4 cup dehydrated onion flakes
Twelve 6" corn tortillas, quartered
4 1/2 ounces sharp cheddar cheese, shredded
40 small or 24 large black olives, pitted and chopped
To prepare sauce, in medium saucepan, stir 1/4 cup of the chili sauce and the
flour until flour is dissolved. Gradually stir in remaining chili sauce, tomato puree
and chili powder. Bring mixture to a boil over medium-high heat, stirring
occasionally; cook, stirring constantly, 2 minutes, until slightly thickened.
Remove from heat; let cool. Meanwhile, place large nonstick skillet over
medium-high heat; add beef. Cook, stirring to break up meat, 4-5 minutes,
until beef is no longer pink; stir in onion flakes. Remove from heat; set aside.
Preheat oven to 375oF. Spray 13 x 9" casserole with nonstick cooking spray.
Spread 1/2 cup of the cooled sauce over bottom of prepared casserole.
Dip 12 tortilla quarters into remaining sauce; arrange evenly in casserole.
Sprinkle evenly with one third of the beef mixture, one fourth of the cheese
and one fourth of the olives. Top evenly with 1/2 cup of the sauce. Repeat
layers 2 more times. Dip remaining 12 tortilla quarters into remaining sauce;
arrange over sauce in casserole. Top evenly with remaining cheese, olives and sauce.
Bake, covered, 35 minutes. Uncover; bake 25-30 minutes longer. Let stand 5 minutes.
POINTS: 5.5

Layered Tortilla Bake Makes 8 Servings
Ingredients
1 pound VERY lean ground beef
1 can dark red kidney beans, drained & rinsed
1 can (28 oz) Italian Classics Kitchen Cut Roma Tomatoes with Basil
(if you can't find this substitute with any other kind)
1 can (4 oz) chopped green chiles (mild)
1 pkg (1.25 oz) McCormicks 30% less sodium Taco Seasoning
1 pkg (10 oz) corn tortillas (12, 6-inch tortillas) -
Try Diane's Corn Tortilla's Thin (1 PT for 2)
1 cup (4 oz) shredded low fat cheddar cheese
Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet;
drain well. Mix in beans, tomatoes, chiles and taco seasoning mix. Reduce heat;
simmer 5 min. Spray 9 x 13 " baking dish with nonstick cooking spray. Cut
tortillas in half; place half of them in bottom of baking dish, overlapping.
Spoon half of beef mixture evenly over tortillas. Cover with remaining
tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 min.
POINTS: 5.5
Freezer Tip: Use two 8" x 8" baking pans. (cut tortillas into 4ths so
they fit better). Cover with foil and freeze. Place in 350 degree oven
straight from freezer. Bake 1 hour or until internal temperature reaches 160 degrees.

Chicken Stroganoff - Crockpot Method Makes 6 servings
Ingredients
1 pound frozen boneless skinless chicken breasts
1 can fat free cream of mushroom soup
16 oz. carton fat free sour cream
1 envelope dry onion soup mix
Put frozen chicken in bottom of crockpot. Mix soup, sour cream,
onion soup mix and pour over chicken. Cook on low for 7 hours.
Makes 6 servings. (serve it over rice or noodles, but be sure to add those points)
POINTS: 4

Sesame Chicken & Vegetables Makes 4 servings
Serve over a scoop of white rice, or pair with bulgur wheat for extra fiber.
Ingredients
1 lb boneless, skinless chicken breast
2 tsp peanut oil
2 cups broccoli & cauliflower florets
2 tbsp teriyaki sauce
1 tsp sesame oil
Cut chicken into bite-size pieces. Heat a wok or large frying pan on
medium heat until drops of water "dance" when sprinkled into the wok or pan.
Put the peanut oil into the pan and swirl to coat the pan. Add broccoli and
cauliflower and stir fry until broccoli turns bright green. Add chicken and
stir fry until cooked. Cover pan and simmer for 5 minutes if vegetables are
not thoroughly cooked. Stir in teriyaki sauce and sesame oil and serve.

Mushroom-Stuffed Turkey Breast Makes 12 Servings
Suitable for your best company, this beautiful roulade is filled
with sauteed vegetables and carves into attractive pinwheel slices.
Ingredients
2 tablespoons stick margarine
1 cup chopped red onion
2 cups sliced mushrooms
1 cup shredded carrot
2 cups drained thawed frozen chopped spinach
2 tablespoons chopped fresh parsley
1 tablespoon grated Parmesan cheese
1/2 teaspoon dried basil leaves
1 slice reduced-calorie white bread, finely chopped
1 cup low-sodium chicken broth
1 tablespoon grated lemon zest
One 2-pound, 13-ounce skinless boneless turkey breast
In large nonstick skillet, melt margarine over medium-high heat; add onion. Cook,
stirring frequently, 4 minutes. Add mushrooms and carrot; cook, stirring frequently,
4-5 minutes, until tender. Stir in spinach, parsley, cheese and basil; cook 2 minutes.
Remove from heat; stir in bread, 2 tablespoons of the broth and the lemon zest.
Set aside. Preheat oven to 325oF. Spray a 13 x 9" baking pan with nonstick
cooking spray. Arrange turkey between two sheets of plastic wrap; with meat
mallet or rolling pin, pound turkey to even thickness. Remove top sheet of plastic
wrap from turkey; spread mushroom mixture down center of turkey breast, leaving
2 1/2" border on all sides. Starting with short side, roll turkey breast jelly-roll
style to enclose filling. Secure roll at 2" intervals with poultry string; arrange
seam-side down in prepared pan. Pour remaining 3/4 cup + 2 tablespoons broth
over turkey; cover with foil tent. Bake 1 to 1 1/2 hours, basting frequently
with broth, until meat thermometer inserted in center of roll reaches 180oF.
Transfer turkey to carving board; let stand 10 minutes before slicing.
SERVING SIZE: 1/12 of Turkey Breast

Your post reminded me of this dish we call it Angel Pie but I don't know why.:)

2 cans of you favorite soup with matching milk/water and your favorite veggies.
mix well and place in baking dish. "Ice" with either mashed potatoes or cauliflower or cauliflower/broccoli (mashed like potatoes)
and bake for 30 minutes at 350.

Chicken & Noodles

Prep/Cook Time: 20 min
Serves 4

Cook: 1lb cut up boneless ck breast
3 cups noodles

Mix 1 can of Cream Ck soup, ½ cup Milk,
1/3 cup parmesan cheese, noodles and ck in
skillet. Heat through.

Italian Pasta Bake

Prep/Cook Time: 30 min

Brown 1lb hamb in lg skillet, drain, stir in 1 jar (26-28oz) spaghetti sauce, 3 cups cooked penne or rotini pasta and ½ c parmesan cheese.

Spoon into 13x9 baking dish. Top with 1pkg (8oz) mozzarella & ¼ cup parmesan cheese.

Bake at 375 for 20 min

Easy Chicken Cacciatore

1pkg (9oz) Digiorno tortellini
2 boneless skinless ck breast, strips
1 green pepper, thinly sliced
1 pkg (15oz) Digiorno Marianara sauce

Prepare pasta as directed on package

Meanwhile, spray lg skillet with no stick spray. Add chicken; cook & stir on med-high heat until cooked through. Add green pepper; cook & stir 1 minute.

Stir in sauce; cook on low heat 1 minute or until heated. Toss with pasta.

Skillet Chicken Tetrazzini

1pkg (9oz) Fettuccine
2 tbsp olive oil
2 boneless skinless ck breast cut in strips
1 pkg (10 oz) Digiorno four cheese sauce
1 can (4oz) sliced mushrooms drained
¼ cup grated parmesan cheese

prepare pasta as directed on package

Meanwhile heat oil in lg skillet on med-high heat. Add ck, cook & stir until browned. Season to taste with salt & pepper. Stir in sauce and mushrooms; cook on low heat 2 min or until heated

Stir in pasta; sprinkle with cheese

Cheesy Beef Enchiladas

Prep/Cook Time: 30 min

1lb hamburger
1 jar (16oz) thick-n-chunky salsa
2 cups shredded cheddar cheese
10 flour tortillas

Brown meat & drain. Stir in ½ cup of salsa & ½ of the cheese

Spread 1 cup salsa in 13x9 baking dish. Place ¼ cup of mixture down center of each tortilla; roll up. Place tortillas seam side down on salsa. Top with remaining salsa & cheese

Bake at 350 for 20 min or until thoroughly heated.

Beef in Mushroom Gravy

2-21/2 lbs boneless round steak
1 envelope dry onion soup mix
1 can (10 ¾ oz) cream mushroom soup
½ cup water

Cut steak into six serving size pieces; Place in slow cooker. Combine soup mix, soup & water; pour over beef. Cover & cook on low 7-8 hours or until tender.

Italian Chicken Mozzarella

8 Boneless Skinless ck Breasts
1 pkt shake-n-bake
4oz Mozzarella cheese
Spaghetti sauce

Shake chicken with coating mixture as directed

Bake at 400 for 20 min or until cooked through

Top each chicken breast with spaghetti sauce and cheese. Bake an additional minute or until cheese is melted.
 
5 Minute Pot Roast

I crockpot roast (I use rump roast)
2 cans cream of mushroom soup (I use the lowfat version)
1 package of Lipton Onion Soup mix
1 bayleaf (optional, but adds good flavor)

Put roast in crockpot
Add 2 cans of soup
Add 4 cans of water (do not mix up though)
Pour dried soup mix over the top
Turn crockpot on low and let cook all day on low. When you get home, you will smell it the minute you walk in the door. The meat will just pull apart and be very tender

Serve over rice (make a few cups of Minute Rice on the stove), and warm up a bag of frozen veggies. You have an awesome tasting easy meal. Even my picky eaters love it.

No offense, but this seems like more than "5 MINUTES"....

This is my favorite casserole recipe that my mother taught me - the kids LOVE it!! :thumbsup2

Brown ground meat with onions and cajun seasoning. (I use ground sirloin)
In another put, cook Kraft Mac & Cheese. (I've tried other brands, but we can tell the difference!)
After Mac & Cheese cooked, add ground meat and 1 can Cream of Mushroom Soup (Again, Campbells brand is the best tasting.) Can be served immediately.

Serve with cornbread or blueberry muffins. We rarely have leftovers! YUMMY!!

Here's another easy one!

Layer frozen ravioli in a 9x13 pan. Cover with prego sauce. Layer shredded italian cheese. Bake according to ravioli instructions on bag. Serve with garlic or cheese toast! :thumbsup2
 
I haven't read all of this post so I don't know if these or similar have been posted.

I make a dish called Pizza Mac. I use all of the things that I like on my pizza pepperoni, black olives, green peppers, onions and mushrooms that I mix w/ ragu. I boil a pack penne rigate noodles and mix with the other ingredients put it in a baking dish and cover it w/ mozzerella cheese then bake till cheese is melted.

I usually fix a green been casserole w/ it. I use 2 14.5 oz drained cans of french style green beens, 1/2 a cup of kraft grated parmesan cheese, 1/2 cup of progresso italian style bread crumbs, 1/4-1/3 cup of olive oil, and a few sprinkles of garlic powder and onion powder. First I blend the cheese, bread crumbs and any seasonings I use together, then I mix all the ingredients together in the baking dish that I plan to use. I bake it in the oven for about 15-30 mins @ 350. This serves 4.

My dh makes a hamburger casserole. He boils a pack of egg noodles. He browns 1lb of groundmeat w/ chopped onions. Then he adds a 14oz can of tomato sauce and lets that simmer for 10-15 mins. Then he adds a package of cream cheese, 1 cup sour cream, and regular size cottage cheese and the egg noodles places it all in a baking dish and covers it w/ shredded cheddar cheese and bakes for 15 mins @ 350.
 
My DD13 LOVES this recipe. She'll eat half herself!

UPSIDE DOWN PIZZA

2 lb. hamburger, browned with 1/2 c. onion
1 pkg. spaghetti mix
1 c. tomato sauce (16 oz.)
1 sm. carton sour cream
1 can crescent rolls
2 c. mozzarella cheese

Brown hamburger with the onion, put in bottom of pan. Spread sour cream on top of this mixture. Add mozzarella cheese. Top with 1 can crescent rolls. Lay the rolls crosswise on the pan mixture. Brush rolls with melted butter and sprinkle with Parmesan cheese. Bake at 375 degrees for 1/2 hour in a 9 x 13 inch pan. (We also add sausage, black onions and whatever else on hand that sounds good)

It is my favorite dish I could eat every day and don't need anything else to go w/ it. Let me know how you like it. I always make it a little different each time just to try different seasonings. The less olive oil you put in it the drier(sp?) it will be.
 
Dinner's over and I must say OH MY GOSH...those beans were a real hit! When I told my family I was making green bean casserole, there was a collective moan. They thought it was the beans and soup recipe! Now I have to go and make another batch for my lunch tomorrow as it's already gone!

My dh thought the same thing when I told him for the first time I was going to make green bean casserole but ever since I made it for him that first time we eat it at least twice while he is home and he is only home for 2 wks in a month. I never even had the soup green bean casserole until I married him. Needless to say I have replaced his families green bean casserole w/ mine.
 
Good idea...my SIL makes soup green bean casserole every holiday, and I mean any and all holidays. Maybe I'll bring your recipe and see what happens! I can guarantee the new one will be a hit with everyone.
