What’s for Dinner Tonight?

Another day off, and a later lunch with husband on our way back from "up north". So, when we eventually got hungry again, kid had the leftover beef stew, husband had the rest of the brat/cabbage/onion thing from last night and I....got SO fancy. Threw a bag of California mix veggies in the microwave, put some queso and sugar free BBQ sauce on it, and called it my dinner. 🫤
 
Another Take-out night for us. :sad2: Chinese sweet & sour chicken, egg rolls, chicken fried rice & special lo mein.

I love the posts from people who cook often. Mississippi pot roast is on my short to of things to try soon.
 
Tonight I'm hoping to make "sushi bake".

Last night my son made homemade mac and cheese. I'm currently doing a calorie deficit (yay...) so the kids ate the very good looking mac with some veg, and I made an over easy egg with a spoonful of pesto, then put it on a piece of thin wheat bread with a smear of ricotta and that was my dinner. Husband ate random leftovers. My youngest had math tutoring and son had basketball practice so one of those not real well put together nights.
How did the sushi bake turn out? Would love to see a recipe!
 
Last night I continued to clean out the fridge and had ratatouille and poached chicken that I cut up and mixed into the veggie dish. Too lazy to make rice or pasta so no carbs were eaten yesterday.

Tonight I’m making a bo ssam from a 2 pound manager’s special at Aldi’s. Want to check the recipe and see if it needs anymore seasoning. If it turns out well it would be nice to serve for the lunar new year. Of course that means no Chinese bbq spareribs but this dish is easier to make. I’ll serve the pork roast with steamed bok choy and all will be good.

She air fries the salmon, but usually I just bake it quick. I also top mine after baking with sliced avocado, cucumber and sometimes thin ribbons of carrot. She doesn't give exact ingredient amounts but it's pretty easy to just eyeball. And it's the only acceptable time that I will willingly use imitation crab. Everyone in my family eats this. Easy to modify; I typically don't have japanese mayo so I use olive oil mayo instead and if you don't have rice vinegar on hand not a big deal without it. Plus it is quick to throw together.
 
Last night night, I made a ground turkey and bok choy stir fry (of sorts).

Still have a lot of bok choy left to cook, so I might air fry it tonight to go along with some pork chops I have as well.

Thanks - I may try this by dropping the cream cheese for a little soy sauce or something in the "sushi flavor wheelhouse" (which would make this dairy and nut free for me). I usually do sushi bowls vs sushi bakes, so this would be a nice change!

Agreed. I don’t need the calories.
