Activities in WDW for toddler without the parks

We will be taking a short trip to WDW for an extended weekend in February with our 23 month old DD. We are staying at the AKL, but do not want to do the parks this time (we have a week long vacation to WDW planned later in the year). We picked the AKL because of all of the activities that will keep the little one happy/busy and the pool. We are planning to try to watch Wishes and water parade from the Poly beach, as well as ride the monorail as many times as she wants. I am looking for other suggestions on things to do with a toddler outside of the parks. She is not big on sitting more than 30 minutes for a meal, so we are going to wait on the character meal until the fall trip. Any activities at the other resorts, DD, or boardwalk that would be of interest to her? We will have a car, so transportation will not be an issue. Thanks for the help!
 
Ride the boat from the MK to Fort Wilderness to check out the petting zoo.

At DD, the fountains if it is warm enough, the lego store for some dupo lego play.

When DS8 was 2, one of his favorite "rides" was the bus that brought us to the park everyday.:rotfl: This might be a nice time to go for a ride on the monorail and the ferry boats. Since you have a car, you could park at the TTC and ride the big ferry and if you go against the crowds you could probably score a nice ride in the front of the monorail.
 
We just returned from 2 trips. In Nov my dd was 22 months and we just returned this week from a trip that celebrated her 2nd birthday. Some of her favorites that were not in the parks:
Downtown: small train, carosel, lego play area, feeding ducks, water spurts from the sidewalk, stich spitting water.
Resort: buses, the "pool" in the room (which of course was just the jacuzzi), playgound. Boat ride to/from Downtown.

Honestly she was just happy to run around!
