Any nice and moist FRUITCAKE Receipes out there???

Hi PoohBear! I have 2 that I really like & both are moist! :D I like both, but the first one is my favorite.

Fruitcake Bon-bons
Yield: 70 minis (I like these best when made in my mini muffin pans. They're just about bite-sized and look very festive with C'mas papers & a piece of cherry on top!)

6 oz orange juice concentrate
1/2 c dark molasses
15 oz raisins (3 cups)
2 c candied fruit (reserve 1/2 cup for garnish)
1 c chopped dates
1/2 c butter
2/3 c sugar
3 eggs
1 1/4 c flour
1/8 tsp baking soda
1/4 tsp allspice
1 tsp cinnamon
1/2 tsp nutmeg
1 c chopped walnuts

Combine orange juice, molasses & raisins. Cook on medium heat, stirring often to prevent sticking, until it boils. Simmer for 5 minutes. Remove from heat. Stir in candied fruit (less 1/2 cup for garnish) & dates. Set aside.

Cream butter & sugar. Beat in eggs, one at a time. Sift dry ingredients & stir into creamed sugar mixture. Add the orange juice mix and nuts. Mix well.

Line mini muffin tins with paper. Put ~1 Tbl batter in each (~3/4 full). Top with reserved fruit. Bake at 350 for 20 - 25 minutes on the middle shelf. Remove when brown on top.

(NOTE: Do not use low shelf!!)

Sony’s Mommy’s Fruitcake
1 1/2 lb chopped dates
1 1/2 lb pecan halves
1/2 lb candied cherries
1/2 lb candied pineapple
1/2 lb coconut or
1/2 lb almonds, sliced
2 cans Eagle Brand milk

Mix all ingredients well. Use disposable 8 1/2 x 4 x 2 1/2 pans. Grease & flour pans. Bake at 225 for 2 hours. Do not overbake. Cool in pans on rack. Turn pans upside-down on rack for several minutes, then thump bottom of pans to remove. Cutpans, if necessary, to remove. Consume immediately, or wrap in cloth soaked in apple cider or cherry brandy, then foil.

ACK! Do people really eat those things???

Ok, so I've never tried one...but it just sounds sooo....ummmmmm....yick!

;)

Oh Robin - you don't know what you're missing! :D Have you ever tried Fruit Stolen? That's a tradition at our house for C'mas morning. It also has candied fruit in it, but it's more like a sweet bread or cake.

I'm just curious as to why people don't like it. Is it the candied fruit? Or is it the cake? I've had some with lousy tasty cake, but then I just pick out the fruit. ;)

I guess I'm not a big candied fruit person...and the smell puts me off a bit. I seem to remember my family getting a fruitcake when I was really young...and I remeber my Mom saying "well, I know what I'm giving them next year...This!" Holding the fruitcake. So I figure it's just an inherited thing :):)

Just for you, I'll try one if I see it this year...but I'm not making any promises that I'll like it!
:D:):D:):D:)
