You do not need a ha room unless you also need something like a roll in shower. You may have to move a table to get the ECv close to a plug but it will work.

WDW handles a family of 3 just fine. Most ADA accessible rooms have more than one bed now.

The ADA accessible rooms are typically the same size as other rooms at that resort.
What will be different is how the room is arranged. If the room has a roll in shower, the bathroom needs to be larger. The space to make it bigger usually comes from the bedroom area - so the bedroom is smaller.

If you feel you need more space, you can ask Housekeeping to remove pieces of furniture that you don't need.
