From port in Dover to Ashford International

I am doing the British Isles tour in September and am planning a few days at DLP after. The ship is scheduled to arrive around 7:30 and the train leaves from Ashford at 11:00. I am planning on reserving a taxi to get from port to station. Is this enough time? Or should I make other plans?

Train or Taxi would leave you more than enough time. I was on Norway/Iceland/Scotland which docked in Dover last summer and the 1st round of debarkation was before 8am. I know you need to check in a little earlier than 11am for the Eurostar but baring a major delay all should be fine. Worse case, you can backtrack from Dover all the way to London King's Cross on one of the faster train to catch the Eurostar there (with more frequent departures)
