I would go to Disney Springs. We did this last year (ate at Chef Art Smiths) for Thanksgiving.
I'm going to throw out Biergarten even though it's not fancy and it's communal, it is lovely at christmas. It's decorated inside and the band does "silent night" - I'm not even christian, but it's beautiful. I didn't check availability but that one is usually available last minute too. Candlelight processional is even still available and I would totally do that on christmas if I were there.

We had a great dinner at Frontera....I hope you enjoy it too !!Got input from DH while at dinner tonight. He rarely wants to give input on where we go but he choose Frontera so that's where I made our ADR, for lunch.
