"Mexican" Chicken
1lb chicken breast, boneless
3 cups cheese crackers (like Cheese-Its), crushed
1 pkg Taco seasoning
Crush crackers in a large zip-lock bag. Add Taco seasoning and mix. Pound chicken to even thickness (if desired). Rinse chicken with water (so coating sticks.) Drop chicken into bag, one or two pieces at a time. Shake to coat. Place coated chicken into microwave safe casserole. Pour remaining coating mix in between pieces if desired. Cover dish with plastic wrap. Cook on HIGH 15 minutes.
We usually serve this with Lipton Rice & Sauce - Spanish and peas. This is great when we're in a hurry for dinner - only ~30 minutes from start to serve!
(The extra coating absorbs the juice from the chicken & the kids "fight" over getting it on their plates.)
