They're not quite the hard NY style bagels that I’ve seen from specialty bagel shops, but they’re still a bit different. I think they used to be Einstein Bros branded, which were steamed I think.
They’re still kind of soft, but they don’t seem to be puffy like the old ones. It doesn’t sound like they’re boiled for very long, or else the crust would be much denser.
