R: Looking for cranberry bread recipe

I have a large bag of unopened craisins in my pantry.

I thought I might make cranberry bread or rolls for thanksgiving. I have a bread machine. My thought was to either use it or to do a quick bread. I'd like to try out a few ideas before hand.


Anyone have any recipes?

Low-fat Cranberry/Nut Muffins

2 eggs
1/2 cup granulated sugar
1/2 cup sweetened applesauce
1/2 cup low-fat sour cream (can use reg. sour cream but it will not be
low-fat)
1 tsp. grated orange peel, packed
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup dried cranberries
1/4 cup chopped nuts

Preheat oven to 375 degrees. Line muffin cups with paper liners. Using an electric
mixer, blend eggs and sugar in a large bowl until thick and light-about 5
minutes. Add applesauce, sour cream and orange peel. Beat until well blended.
Mix flour, baking powder, baking soda and salt.Mix into egg mixture until just
blended.
Stir in cranberries and nuts. Divide into the muffin tins and bake about 20
minutes or until tester comes out clean. Transfer to rack to cool. Makes about
12-16.
 
Cranberry Lemon Oat Scones
Preparation time: 20 minutes
Baking time: 15 to 18 minutes

1/3 cup sugar
1 1/2 cups flour
1 1/4 cups oat bran
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/4 cup butter or margarine
3/4 cup low-fat lemon yogurt
1/4 cup egg substitute
1 6-ounce bag Craisins® Sweetened Dried Cranberries
1 tablespoon sugar


Preheat oven to 425°. Grease a cookie sheet.
Combine dry ingredients in a large mixing bowl. Work butter or margarine into dry ingredients until butter is the size of small peas, using a pasty blender or fork. Add remaining ingredients except sweetened dried cranberries and 1 tablespoon sugar, mixing just until dry ingredients are moist. Stir in sweetened dried cranberries.
Turn dough onto a lightly floured surface and gather into a ball. Cut dough into 2 pieces. Pat each half into a 6-inch circle; cut into 6 wedges. Place cookie sheet. Sprinkle with sugar.
Bake 15 to 18 minutes or until golden brown.
Makes 12 scones.
 
Cranberry Almond Cinnamon Rolls
DOUGH:
1 16-ounce package hot roll mix
1/2 teaspoon cardamom
FILLING:
1/4 cup margarine
1/3 cup sugar
1 teaspoon cinnamon
1 6-ounces package Craisins® Sweetened Dried Cranberries
1/2 cup sliced almonds
GLAZE:
1/2 cup powdered sugar
1 tablespoon milk
1/2 teaspoon almond extract  
Grease 13 x 9 x 2-inch pan.
Prepare dough according to package directions, adding cardamom to dry ingredients. Turn dough out onto a lightly floured surface. Knead dough for 5 minutes; let rest for 5 minutes.
Roll dough into a 10 x 15-inch rectangle on a lightly floured surface. Spread 1/4 cup margarine evenly over dough. Combine sugar and cinnamon in a small bowl; sprinkle evenly over dough. Sprinkle sweetened dried cranberries and almonds evenly over dough.
Starting at the 15-inch side, tightly roll dough, jelly roll style, pressing edges to seal. Cut into 15 slices; place cut-side down in pan. Loosely cover with plastic wrap; let rise in a warm place for 30 minutes. Preheat oven to 375°.
Uncover rolls and bake for 25 minutes or until golden brown. Cool in pan 10 minutes. Combine glaze ingredients in a small mixing bowl. Drizzle rolls with glaze. Makes 15 rolls.
 


All of these recipes sound good! I'm in a baking mood too - but I have no cranberries in the house. Which saves me from making and eating them!
 
Craisins are sooo good. They never last long enough to make anything with them. If I open the bag,I will eat the entire thing.

I am off for a few days this week. It will give me a chance to try out a few things that I want to make for Thanksgiving.
