Skipping Disney this year. Thinking Caribbean resort

I've never done any research unless it was Disney related. I don't even know what island I would want to visit. The only thing I know is that I want a nice all inclusive by the water, but on an island where there are lots of interesting other things to do (excursions).

Any suggestions of place and even resort?

Not sure on budget, what time of year you are considering, and if you will be traveling with children (adult only vs family friendly), but I would recommend Bermuda. It’s beautiful, safe, and has plenty of different things to do and places to explore. The big caveat being that it seems very quiet in the evening. Like enjoy dinner and go to bed level of quiet. No casinos or nightlife.
 
Providenciales in Turks and Caicos is beautiful. There are plenty of resorts, from small and quiet to huge all-inclusives, and the beach itself is pristine.

Adults only, but it's my sister, my DH and me, along with our sons (19 and 21).

Over Christmas break, so sometime between Dec 23 and Jan 7. I know that ups the price, but it might also be our last time as a family taking a trip like this.

With that additional info, my best advice is search, Adult Only. If you don’t have kids, the experience is so much better when not surrounded by kids. No crying at dinner, no “hey mom, watch this,” No splashing at the pool.
 
Aruba was nice, there are two massive all inclusive Marriotts on the Island and a lovely Hyatt with a casino if I remember correctly, but to be honest the island is full of resorts and timeshares of all kinds. My impression is it has a fairly high end civilized vibe, that I liked, it does not have the party and debauchery vibe some other islands seem to put out there, no judgement but not my scene.
