The What's For Dinner Thread - March '11 (recipe index in OP)

Jen - I believe that 1 tablespoon = 15 g. So, for the recipe, you might need 4 tablespoons of butter.


WFDT? At the moment....nothing. We headed out to a festival out in the 'country'...well, it used to be 20 years ago....and stuffed ourselves with food that we don't normally eat. I have pictures...but I'm too tired to load up into Photobucket right now.

We had movie night last night. We watched "Limitless" with Bradley Cooper. It was interesting. If you're looking for something different, it's a movie you can try!

Tonight's dinner is pot roast with potatoes and carrots.

Otherwise, it's going to be an easy day before we go back to work/school tomorrow.

I made my favorite brownies last night. These things are so chewy and moist, I haven't found another brownie recipe that we like as much.

Ingredients:

1 1/2 c. butter
2 2/3 c. granulated sugar
6 eggs
1 1/4 c. cocoa
2 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
Chopped walnuts (optional)

Directions:

Cream butter and sugar. Add eggs two at a time mixing well. Stir in cocoa and vanilla. Stir in flour, baking powder and salt. Pour into a greased cookie sheet or 9x13 pan (cookie sheet is best). Top with chopped walnuts if desired. Bake at 350 degrees for 35-45 minutes until the center has just lost its shine and toothpick comes out almost clean.

***I leave out the walnuts.
 
Good morning, everyone! I hope that everyone is doing ok this morning. We had what I call a "sympathy storm" last night. At about 11:15 there was a huge clap of thunder and lightning and the power went out. We then had a spectacular storm complete with lightning and thunder bouncing all around us for the next several hours. Luckily, the power came back on after 20 minutes, so we weren't out for too long.

It looks like Jen and I are on the same wavelength. We are having my crock pot roast with potatoes and carrots. I'll probably steam some broccoli, too, since I need to use it up soon.

The baptism went really well, yesterday. We had a picnic afterwards, and my cake batter rice krispie treats were the hit of the party. They were really easy to make, too. To the melted butter and marshmallows, you just add 1/3 cup dry yellow cake batter. Then mix in the krispies and some candy sprinkles. Once they're spread in a pan, top with more sprinkles. They looked so fun, and tasted yummy!

Good Morning Ladies! Thank you all for thinking of us up North. I worry about our coastline friends, they will get the worst of the storm. We are fine up here, while I am not in the NW hills I am pretty high up. Buddy secured the sheds and dug trenches to steer the water away so they do not flood then spent the day helping some other guys bring in their crops. My yard is not almost projectile free but so far the winds are not as bad as the thunderstorms we get, thank goodness!

Kat- thank you for checking on me!

Sheryl- your meals sound heavenly! How are the kids?

Glynis- I saw Aida on Broadway and it remains one of my favorite shows. i listen to the soundtrack when I clean. I am going to keep that Krispie recipe in mind, it sounds like a keeper. I also make the ice cream sandwich cake that you posted here years ago, easy Peasy and delicious!

Jen- I am so glad you are starting to feel better.

Princess- You bake from scratch for drop in company? You rock!!!!!!!!!!!!!!!

Marilyn- Your poor Mom! I think we dodged a bullet, yes? I am not officially ready for Winter :thumbsup2

Becky-Erica would swoon over that cheese! Stay safe!!!!!!!

Robin- My freezer is nto full so I need to think about my winter stock up. I did get my cords ready to plug my fridge adn freezers into the generator.

Yesterday i went to a houswarming so dinner was there for me. Buddy had his favorite sandwiches. Friday I cooked the worst Tuna on the planet. Buddy suggested I give the rest tot eh cats, it was that bad.

I have salmon if the weather clears, if not we are going to have sandwiches. I stocked up on cold cuts JIC.

Right now I have Dan and Erica here, their power is out. Donny and Anna are fine but lost their gazebo. Power was still on. I have not heard from Marisa so all must be well. Welby was here with the girls, Brian is away. Buddy took her to check on the animals.

Oh, it was my BF who cut her finger. Just realized I didn't make that too clear.

I will post pictures from the storm on FB later and a video I took. I watched the storm from the front door for a while last night. Watching it and the idiots who were out at midnight last night. :sad2: So many cars came and went from the complex across the street.
 
Just checking in, it's windy here but not bad. The wind's in the 40's. It is so sunny! We are extremely fortunate, hoping Becky and Laura are having the same luck.

Haven't lost power at all and we've had no damage at all, our oaks have lost a lot of leaves, that's it. We still have a few hours of wind but I'm counting my blessings and thinking of those who haven't been as fortunate.

Dinner is over here and it was delicious. I'm going shopping tomorrow and it will be a late day for both UncleR and I, so tomorrow it's homemade italian subs for dinner.

J gets braces tomorrow. I wonder if he'll be able to eat those sandwiches? :confused:

Today, UncleR and I had our first child together. J went to take the dogs out this morning and we had a visitor on our front porch.

She/he came right in and has loved on us all day long. It is the most loving cat I've ever had the pleasure of meeting. We have named it "Tooter"...which is short for Ringtail Tooter, because it has a raccoon tail with rings.

She has an injured eye and is INCREDIBLY thin, but is acting very healthy. She just needs food and some loving. UncleR will take her to the vet tomorrow and we'll get that eye taken care of.

We don't actually know if it's a boy or girl. My money's on girl, UncleR says it's a boy. We'll see who wins the bet tomorrow. We think she (yes, I'm saying she) is probably young because she's so tiny. I am already in love! :lovestruc

Hope all the east coasters have fared well. I hope everyone has a great start to their week.

I go back to work tomorrow, but I have a 3-day weekend this next weekend for Labor Day...so that's something to look forward to!
 
Jen I have a cat named Bruce. We named her before we found out he was a she. I don't think she minds.;)
Oh and I think J is going to wanting soup for a while. My teeth were very sore for a couple of days.

Dinner is a salad and rotisserie chicken for me and whatever Buddy wants. Everyone is home now and they have snacked all day so we are nto in the mood for a big dinner.

Yesterday i baked JIC and the fam demolished my cheater version of a chocolate mayo cake.

Chocolate cake mix, 1 1/3 cup coffee, 2 eggs and 1 cup good mayonnaise, 2 cps chips

mix all ingredients reserving 1 cup chocolate chips. toss in 9x13 in pan, top with remaining chips. Bake 350 degrees for about 30 minutes.

It was good! Buddy has not touched the blueberry pineapple cake dump cake but that is all that is left.

Bruce is a good name. :lmao: That's why we settled on Tooter, that's sort of unisex.

Orthodontia is such an investment, it's baffling. Both financially and time. Ugh. But, I'm hoping that in a few years, we'll be looking back and talking about how worth it this whole thing was.

Thank goodness none of us are allergic to kitties or dogs. I don't know what we would do without our babies.

While at Target she caught her little finger on a broken piece of plastic or metal in a freezer and punctured it. She went off to tell someone so they could fix it and they insisted she go to the minute clinic.

What a yucky day! I hope it easily heals up for her.

yesterday I made jam with the remaining figs. I had some on my toast this morning. :love:

I need to find me some figs! When I took that dessert cooking class awhile back, we stuffed dried figs with sea salt almonds and then dipped them in dark chocolate. AMAZING!

We had a fabulous long weekend in Austin with some good friends. Stayed at a really nice golf resort Friday and stayed downtown last night. DH's birthday is today and he wanted to golf so they did that on Fri and Sat. On Fri, me and my friend hit the bar :-)rolleyes1) then talked the cart guy out of a golf cart so we went joyridding on the golf course. When we came across the husbands, they acted like they didn't know us :laughing: It was super fun.

Ate GOOD food - Austin has great food and drinks. Got home just a bit ago. We're tired from the heat (108-110 all weekend down there, where it's more humid than here) so DH is probably game for just take out and a night at home.

And yes, that tea cake is easy to bake from scratch when we have drop-in guests. It also impresses the heck out of everyone as well....which is why I do it! :laughing:

It sounds like you had a wonderful weekend in Austin. I haven't had the opportunity to get down that way yet. We were planning on it before I went back to work this summer, but the temperatures persuaded it otherwise. Maybe this fall!

It's very clear that Tooter hasn't had a family in a long time, just judging by her weight and her eye injury. So, I'm not sure. She's so loving and trusting of people. She settled down in my lap earlier and rolled over on her back and let me cuddle her like a baby. :lovestruc

Good news is that she's using the litter box correctly! :rolleyes1

Mary, I have the same reaction to cats that Mary does! My eyes swell & I get an awful asthma attack.

Aimee, Glad y'all had such a good weekend! It sounds like fun, except for that heat!! Humidity makes such a difference. We were coming out of church today & I told Bob that the weather felt much cooler. Well it was 98 degrees! But our humidity had dropped to 37%!

We went out to lunch with Angelilna, Josh & Jude. It was nice, those leftover were dinne.

The Hurstbridge Wattle Festival is one of those yearly festivals in Melbourne that is part of the marking of time. It heralds in Spring and the golden yellow blossoms from Wattle Trees.

We got there early and went to have breakfast at one of the cafe's there. It didn’t seem all that busy when we got there and placed our order. I don’t know what was going on in the kitchen, but it took them over 50 minutes to bring out our food. We were about to get up and leave when we realized that our order was up next. Nothing wrong with the food….

I ordered the equivalent of the kitchen sink for breakfast….sausage, bacon, poached eggs, tomato, spinach, mushroom, hash brown and toast.

The festival’s main attraction is a steam train. It runs about 5 or 6 services during the day, a round trip of about 45 minutes. Tickets sell out early, hence why we got there early.

When I first read this I thought you were talking about me. :rotfl: I was thinking "I didn't go beyond the front door".

I was watching out the door for about 20 minutes and there were 4 cars in the time. I was wondering if someone was dealing drugs. :sad2:

Princess- your pics are fabulous. My future DDIL want to visit your fair land so I told her that she needs to come over to the DIS side for a preview! She loves Africa and has my son considering a Safari in the future so she has not disclosed this little travel plan yet ;) I told her to plan WDW and stay at AKL for a sneak peak at what they are looking forward to :thumbsup2

Today I need to put my yard back in order and hopefully weigh in. I have a piece of wild salmon for dinner. The tuna I ruined was wild caught albacore. There was Copper River Salmon that looked gorgeous but it was whole salmon and was way too much for the two of us. I should have just bought that and used the leftover for my salads.

I have a mutiny lately. The tomatoes are awesome this year and no matter what I plan for dinner Buddy wants a tomato sandwich instead. he stuck some
sliced turkey on his sandwiches to stop my whining but yesterday I gave up. The boys all wanted tomato sandwiches and Erica insisted on grilled cheese and tomato. I give up, I will make sure there is enough sliced bread while tomatoes are in season :rotfl2:
 
Nancy My all time favorite sandwich is Tomato,salt and a little mayo.

I am glad Irene is over and no one here had too much damage.

Princess Your pictures make me really want to visit. I will have to live through your pictures for a while though.

I am thinking I need to start living on salads for a while.:santa::rolleyes1

Someone was following me around in the mirrors lately. They had the nerve to stand in front of me in the mirrors making me think I was getting fat.;)
