I booked all our reservations online, so I just went in and looked up what it says in there. I can't remember what I checked off, but I thik it was "other", with the intentions of contacting special diets (like we did last time).
It says on my reservation:
Even if you didn't make any note while doing the reservation (and people have said that you should say you have an *allergy* to meat, fish, milk, etc, to give them a head's up, since they don't have "vegan" as an option), just write to them or call them. Have your ADR #s and the dates, and just let them know.
The CMs answering the phones haven't necessarily even BEEN to WDW, and many aren't even in the same state. Don't let them panic you.

Disneyland, where menus aren't nearly as intricate and dining isn't as worried-about, you can call to talk to their chefs about issues. I had an hour long conversation with one of their chefs, it was awesome. They want to feed EVERYONE. They don't want to leave people un-fed. So they will work with you. And that's just Disneyland...let alone WDW!
