Yummy Italian Lemon Chicken Recipe

Rao's Famous Lemon Chicken (Polla Al Limone)



2 broiling chickens, 21/2 to 3 pounds, halved
Lemon Sauce (recipe follows)
1/4 C chopped fresh flat-leaf parsley



Preheat Broiler for 15 minutes before using.

Broil chicken halves skin-side down for 15 minutes, turnover and broil chicken halves another 15 minutes. Skin should be golden brown and juice should run clear when pierced with a fork. Remove chicken from broiler. Leaving the broiler on. Using a very sharp knife, cut each half into six pieces (leg, thigh, wing and three small breast pieces).

Place chicken skin-side down on a baking sheet with raised sides. Pour lemon sauce over the chicken, and toss to coat well.

Return to broiler and broil for 3 minutes. Turn each piece and broil for another additional minute. Remove from broiler and place chicken on a serving platter.

Pour sauce into a sauce pan and boil for 1 minute. Pour sauce over chicken. Sprinkle parsley over chicken and serve.



Lemon Sauce

2 C fresh lemon juice
1 C olive oil
1 Tsp red-wine vinegar
1 1/2 tsps minced garlic
1/2 tsp dried oregano
Salt and pepper to taste

Place all ingredients in a large bowl and whisk together until well blended. cover and refrigerate until ready to use. Whisk or shake well just before use.


My suggestion is to make the lemon sauce ahead of time so the garlic can blend into the sauce.

Also when broiling the chicken, the chicken should be turned over only once.

I wonder if it is the same Rao's with the restaurant and sauce line? If so, their tomato sauces are good, but expensive.
 
This Rao has a restaurant in NY. I got the recipe from watching Martha Steart one night.

It's very easy to make and YUMMY, YUMMY, YUMMY!!!!!!!!!!
 
The Recipe for Lemon Chicken, and the line of Rao's sauces (expensive) are both from the same restraunt "Raos" located in the "Spanish Harlem" section of NYC...it's been there for years, and it's a very famous, impossible to get into unless your a celebrity or connected type of place. People "own" the tables they sit at. For all of us who are unable to get in, they do have a wonderful cookbook available, which also gives a history of the restraunt.
