Animal Kingdom:
Kilimanjaro Safaris
Na'vi River Journey

Magic Kingdom (1/2 day):
Meet Ariel at her Grotto
Jungle Cruise

Pirates of the Caribbean is another one to consider. There is no height limit, and it has lots of interesting sights and sounds.

Also, it does not offer a fastpass (and you do not need one), but for planning purposes Country Bears and Tiki Room were big hits with my toddler.
