When these things are added together, I would be totally stressed out:
-An ADR all the way across property from your resort
-on arrival day
-where the timing is already so tight that you are considering an Uber
-and dealing with luggage
A Disney plan that looks good on paper often does not work IRL. I'd opt for a restaurant at the Poly where there are several good choices: 'Ohana, Kona, Kona Island sushi bar, or apps and bevs at the outdoor Tiki Terrace. You could be really indulgent and stay in and order the 'Ohana Twilight Feast from room service.
If Jiko is a must do, I'd opt to eat at the bar area without an ADR. I've done this several times and enjoy it very much. I've been offered the full menu, but I like the choices on the bar menu. If a reserved table suits you better, check the MyDisneyExperience app and make an ADR when you get off the plane. As a reference point, there are several Jiko ADR times open for tonight.
