So the ribs turned out great and the smoked potatoes were good also. The only problem is I seem to be allergic to or have a terrible intolerance for smoked pork ribs. :headache:
This weekend we made smoked deviled eggs, oh so good. There is a tri tip roast in the smoker for tonight's dinner. Have to figure out what is for dinner tomorrow. We do have a turkey, need to thaw and try that.
Beef jerky turned out very well, we smoked it for an hour, then put it in the dehydrator to finish it off. The added benefit to smoking, it kept the dehydrator cleaner as the jerky was pretty dry when it was put in there.

So one night I made smoked stuffed peppers,

And this was last nights Sirloin Roast.

The roast did need to rest longer, but DW had a commitment and was short on time, so we sacrificed and cut it up early.
Really digging this smoker thing. Have to figure out how to mount it to the truck for camping.....

I was in Dallas this past 4th of July weekend to visit Dear Son #2 who has worked in the Metroplex for two years now after college graduation. Finally I got around to visiting the JFK Museum where the sad events of November 1963 took place. Aquariums and amusement parks are fine to visit but I am somewhat of a history nerd and love archives, museums, and the like.

Anyway, supposedly Lee Harvey Oswarld (who worked in the building which was a depository (storage) building for school textbooks) shot JFK from the 2nd floor from the top far right square window (in the central orange brick building).

Although the trees have grown up over the 50 years, you can see from the building he would have had a clear line of sight.

This view is from the 2nd window from the right. The corner window is glassed off and recreated with textbook cardboard boxes to replicate the November 1963 appearance. My mom (who was pregnant with me at the time) tells me that she remembers to this day where she was when she heard JFK was shot, what she was wearing, and many events of that day. So sad.

But it was great to see DS#2.

PS - tiggerdad, you never told me that President Ulysses S. Grant has a Presidential Library on the campus of MIssissippi State University in Starkville, MS only 90 minutes from where I live (across the Bama state line). I'm going to have to get up to StarkVegas this summer and check it out. And I'll have to get over to Vicksburg later as we discussed.

Ed considering events of July 4 1863 in Vicksburg it is no wonder that Mississippians are reluctant to admit there is a U.S. Grant Museum inside the borders of the state.
Your mom is not the only one that remembers where she was and what she was doing when JFK got shot. I was in the 1st grade and we were on our way down from our classroom to gym class when it came over the intercom. Days later I remember coming home for lunch to find my mother in the living room crying as the caisson bearing his flag draped coffin was led down the street

I started to post these in the "Post a picture of your camping setup at other campgrounds", but even though these were all taken while camping, none are of the "setup".

I wanted to show off some of DS's (Ian for those that have met him) pics. He has had a photographer's eye since he was very little. He bought himself a nice camera (Nikon D7500) last year and is still learning how to use the finer functions, but the following pics were taken over our last 3 camping trips, GSP (for the DIS Meet), Springfield, IL Sangchris Lake (Midwest DIS Meet) and this past weekend camping on the Mississippi River across from the Arch (Casino Queen RV Park).

All of these are as he shot them (no enhancements in photo editing software). I cropped a couple of the Aeroshell pics to get rid of some excess sky, but otherwise these are how he shot them.

Think they fly close? I'm sure it is an optical allusion, bit those wingtips look overlapped.

Interesting stunt plane. Two YAK-55 planes connected with a GE jet engine between them. He calls it a YAK 110. This guy was impressive.

    Gloria,

    Thank you for your thoughts.

tiggerdad and I are on the outside edge of the weather rotation. I'm scheduled for rain every day this weekend ( and I guess he is too to a slightly greater degree).

I'm hoping the dams/levees, and other flood protections in Louisiana can hold firm. Once you try to tame the Mighty Mississip, you've got a tiger by the tail. Let's hope they make it through.

Great shots by Ian, my only critique of them is he has everything perfectly centered, need to offset the subject sometimes, rule of thirds. Other than that, very good.

Very nice. I see brackets to mount the smoker on the truck in the future :thumbsup2
Nice looking weld, but you really need to work on the aim with the hammer. :)

    j
@tigger92662, if there are brackets made it will be by our local weld shop, their welds put mine to shame. I need some more practice, but was not feeling bad after a 15 year hiatus.

@Teamubr, "aim" ??? I was just playing whack a mole. They were only lock pins for access gates.
