Cheap and Easy Casserole...

sounds really yummy - do you slice the hot dogs?

My kids' newest favorite dish.

2 cans chili
1 pkg hot dogs
1 cup self rising corn meal mix
1/2 cup milk
1 egg
2 T vegetable oil
1 cup shreaded cheese

In a 2 quart casserole dish, pour in the two cans of chili. Chop up hot dogs and put on top. Wisk together corn meal mix (I use Jiffy), milk, egg, and oil. Pour on top of hot dogs. Add cheese.

Bake at 400 degrees for 25 minutes.

My 10 year old just finished making it for tonights dinner. Dad is working late, so we're having a "meat night". This recipe came from the Dinner Doctor cookbook.

The original recipe says to slice them length wise. However, we just slice them into bite size pieces instead... like you would do for beenie wheenies. So each hot dot gets cut into like 10 chunks.

It is pretty tasty. Not that healthy, but cheap and tasty, very nice comfort food.
 
I am sorry it has taken so long to reply I have been out of town.

I use a glass pie dish only b/c I haven't to buy a pan that is about 8x8. I put the green beans in the dish and in a measuring cup I mix the bread crumbs, cheese and any seasonings (salt pepper garlic powder onion powder) I blend them well w/ a fork in the cup then add them to the dish w/ my green beans they I add the olive oil I mix well w/ my hands then I smash it down in the dish w/ a spoon. then stick it in the oven and bake.

This sounds so good my only question is where do you put the olive oil. I am soo not a cook, do you mix it with the green beans, or the cheese and bread crumbs. Someone please answer even if it is only your opinion, I'd really love to make this tonight.

This one is more of a side dish. My mother-in-law always referred to it as "Broccoli Gook" because it looks so bad, but it tastes GREAT and it's always a hit with guests. It's also soooooooooo easy to make!

Broccoli-Cheese Casserole

1 box Ritz Crackers, crushed
1 large block Velveeta, crumbled
3-4 packages chopped broccoli
1 stick margarine, crumbled

Mix all ingredients and pat into a casserole dish. Bake at 375-450 (the deeper the dish, the lower the heat) until the cheese and butter are totally melted and the top is golden brown.
 
1 lb pasta (I prefer ziti, but any pasta except spaghetti will do)
1 lb ground beef
2 c shredded cheese
1 can Cheddar Cheese Soup plus 1 can full of milk
1 envelope taco seasoning (store brand is usually very cheap)

Preheat oven to 350 F. Boil pasta, drain. Brown hamburger, drain, and add taco seasoning and water according to package directions. Mix together. Add soup and milk and stir. Put half of the pasta on the bottom of a casserole dish and layer with half of the shredded cheese. Put rest of the pasta in the pan and cover with the remaining cheese. Bake until cheese is melted and it is heated throughout (about 15-20 mins).

My family loves this one...probably it is because it is the only one I make without vegetables! :rolleyes1 I have served it with sour cream and salsa on the top, too. Enjoy!
 
Sorry if something similar has been posted. I didn't have time to read through 13 pages yet.

Taco Bake
1 pound ground beef or ground turkey
1 can of rotel (I use the generic from wal-mart)
1 can of cream of mushroom soup
1 can of corn, drained
1 can of black beans
corn chips
shredded chedder cheese

Preheat oven to 350. Line the bottom of a 13 x 9 baking dish with the corn chips. Brown meat and drain. Add rotel, soup, corn and black beans to the meat. Mix well and let it simmer together for a few minutes. Pour it into the dish lined with corn chips. Bake for about 15 minutes. Add the cheese and bake for another 5 minutes or so.

When we started making this, we didn't use the corn or the beans. We've also tried with just one of these two. We once added taco seasoning, I didn't care for it as much. My sister, however, liked it with the taco seasoning.

Okay, here are a couple of "recipes" (more like general guidelines to follow) I enjoy -- believe me when I say none of them can be screwed up! they are virtually fool proof and delicious every time~

the rice-a-roni casserole is similar to the one that a couple of others have posted. (I was surprised b/c I thought I made it up!!!) note that you can literally add *anything* to it and it will always turn out delicious. As a general rule, add a protein (chicken/tuna), veggie, and a cheese. I don't always use the whole seasoning packet that comes in the box -- I start with half of it and then add a bit more if the flavor seems weak. Rice-a-roni can be bought for 1.00 or less on sale!!! wow!!

Rice-a-Roni-Casserole:

Use 1 box rice-a-roni or generic equivalent. (one box serves 2-3 ppl, use 2 boxes for a bigger family). prepare it according to the directions on the box. When it is time to simmer the rice a roni, add any fresh veggies you want. (I think I usually add about a cup or so). If you don't have fresh veggies, you can add frozen or canned veggies about 10-15 mins into the cooking time (so they don't get too soggy.) At this time, you can also add a can of tuna or chicken. When it is almost done (taste to see if the rice is tender), sprinkle a bunch of cheese on top and let it melt in the pan. My favorite is canned tuna, fresh broccoli, and cheddar cheese. Yum! So cheap (about 2.00 a pan!) and good -- I could eat it two or three times a week!

Stove-top casserole:

Cook stove top (or generic) stuffing according to the package. When you come to the step where you stir the dry stuffing into the boiling water/margarine, also add a can of chunk chicken. Let stand for a few minutes, fluff, and enjoy! Very easy! Serve with green beans or another veggie.


Easy veggie chili:

-1 small onion
-1/2 - 1 green bell pepper, chopped
- 2-3 small tomatoes, chopped (optional)
- 2 - 3 cloves garlic, crushed/minced
-about 1-2 cups veggie chili mix (comes in a box in the "healthy" section of your grocery store in a box, or you can buy it really cheap in bulk at whole foods or another natural foods store. Very easy to find in most locations -- just ask the grocery store clerk)
-2 cans beans (black, pinto, and/or kidney)
-1 or 2 cans stewed/chopped tomatoes (can use ro-tel)
-1 can corn

brown the onion in oil. Add chopped bell pepper and garlic and stir for about a minute until fragrant. add chili mix, canned stuff, and tomatoes (if using). Pour in a few cups of water (until it seems like a bit more watery than the right "chili-like" consistency ).

Simmer for as long as you want -- but at least an hour to bring out all the flavors. Add water whenever it seems too thick. Remember to stir frequently! Taste and add as much salt, pepper, and other flavorings as you like (cumin and cayanne are great in this!).

There is no right or wrong way to make this chili -- it is always delicious! Serve with cornbread.
 
A hit at our house...

1 lb ground beef, browned
2 cans black beans, drained and rinsed
2 cans Rotel tomatoes
1 bag shredded Mexican-blend cheese
1 small onion, chopped
24 small, round flour tortillas
salsa and sour cream

Preheat oven to 350 degrees. Combine browned beef, tomatoes, onion, and black beans in a pot or pan and simmer on stovetop for 20-30 minutes.

Pour 1/3 of the mixture into a 13x9 baking dish, cover with 8 tortillas so that the mixture is completely covered. sprinkle cheese on tortillas and pour another 1/3 of the mixture on top. Place another 8 tortillas and cover with cheese. Pour the remaining 1/3 on top and cover w/ tortillas and cheese.

Bake for 30-40 minutes at 350 degrees.

Serve w/ salsa and sour cream.

*Oh, I cut the cheese in half, just because I'm cheap, and I used 1 1/2 packages of boca veggie crumbles for the 1 pound beef.

other than that.. I stuck with the recipe. :)

I made the Broccoili Cheddar Ritz Casserole last Thanksgiving and everyone LOVED, LOVED, LOVED it. Even the small kids were eating it. I make it every year now.
 
And for my favorite (easy!) crock pot recipe:
Tri Tip Burritos
tri tip roast-trimmed
1 large jar of salsa
torillas
grated cheese(optional)
olives(optional)
sour cream(optional)

Place tri tip in crock pot, dump on salsa. Cook on high for 6-7 hours.
Spoon into your torilla and top with whatever you like.
I just read your post. I miss tri tips so much. The tri tip roast that you find in Ca. is cut much different that the ones in the rest of the country...just another reason I miss CAlifornia
 
I haven't read the whole thread, but here is a recipe for a great Potato Casserole.

Cheesy Potato Casserole

2 lbs frozen shredded potatoes
2 cups sour cream
2 cups shredded cheese(I use sharp cheddar)
2 cans cream of soup(I've used chicken and onion)
Salt and pepper

Mix everything together in a large bowl. Empty into a 9x13 casserole and cook at 350 degrees until brown and bubbly. Usually take about 1 1/2 hours.

You can add veggies or maybe chicken or turkey. I tried adding hamburger once, but it was pretty greasy.

2.5 Lbs. ground beef (OR substitute 1 lb. of bulk sausage + 1.5 lbs. beef)
Bag of Rotini noodles (any would do, but I prefer rotini)
2 cans cheddar cheese soup
2 jars Pizza Quick sauce
Package of pepperoni slices
2 cups grated Pizza Mix cheese

Put noodles on to boil; drain. Brown meat(s) and drain.
Mix cheese soup and pizza sauce in large bowl. Add noodles and meat when done cooking.
Spoon mixture into 9 x 13" dish. Top with pepperoni, then cheese.
Make a foil "tent" and cook for 20 mins at 350.
Uncover and cook for 10 more minutes.

This is WAY better the next day when microwaved (to me, anyway).
We prefer the sausage+beef combination. It's up to you.
There are 3 of us. If I cook this for supper on Saturday, we warm it for lunch Sunday, and again on Sunday night. It's expensive to make, but we eat it till it's gone.

You can make it ahead of time and store in fridge till time to cook, but unless you are there to sit it out for at least an hour to warm back up some, it will take you a long time to cook it.
