Genealogically, assuming it's your first cousin having the baby, the baby is your 1st cousin once removed.

This is correct. OP’s children would be second cousins to the baby.

Think of it this way. First cousins are children of your parent’s siblings. (Same generation; they share the same grandparents.) Second cousins are children of your parent’s cousins, or grandchildren of your grandparent’s siblings. (Same generation; they share the same great-grandparents.) “Removed” applies when the relationship is between people of different generations.

It can be confusing, but in my family, we just refer to all of them as cousins.

But most people just call it "second cousin"
I know technically it is first cousin once removed but I always thought that sound a bit pompous so like you said I use second cousin or third cousin for the children of my cousins children.

It's based on generation level - if the two people being compared are not from the dame generation in the family, they are 'removed'. So, first cousins, once removed is correct. There are some laws on getting married that have to deal with this, so it is important ;)

If your cousin is your first cousin, her child is your first cousin once removed.
