We are in your same boat. We are pulling our DD (5th grade) and DS (7th grade) the two days before Thanksgiving and the Monday after. They only have a half day on Wednesday 11/21 so I feel like that is a throw-away day anyway. The really tricky part is, we are not telling them about the trip, so I am trying to figure out the best way to go about getting work for them to do without them finding out about the trip. DD's teacher is actually Disney-obsessed and I think would be great about keeping it a secret, but for my DS in 7th I am not sure what to do. Part of me is tempted to just not worry and he can reach out to friends about work. His math text is on-line so he can access that- anyway, I am still trying to figure that part all out regarding getting the work ahead of time.
