I know that I answered the QOTD but Vija brought up some thoughts.

The Disney movie that I associate with ds2 is Beauty and the Beast. Yes it is pretty funny but I do. It was the first movie I took him to. He must have been less than 2. Just as they were about to dance he started to cry. I spent the next few minutes holding him in the back of the theater rocking him so that I could watch the movie.

When he was 4 he got tickets with the rest of us to see the Broadway show. He sat there mezmerized.

When he was junior in high school there were rumors of his school doing B&B but we were too close to NYC. At the end of junior year they had announced that the show would close at the end of July. For his birthday he asked us to take him to see the show. So we took my sister and ds's cousin to see the show. It was such fun to sit next to my son. He had spent 3 years working backstage at his school and to see what a BRoadway show could do amazed him.

2 weeks later they announced that the school had the rights to do the show. He was co-stage manager in charge of a good deal of the scenerey since he had the side of the stage that went out into the hall. I got to work with the costume/ scenerey guy on the costumes. It was great fun to work on that with my son. That show won a big award here in the county and he was happy to part of that crew.

SOrry this was so long but it does have great memories for me.

Well, it was tough but we survived the boards being down this weekend. I am glad they were back up when I tried this morning.

QOTD Monday - What is your favorite vegetable recipe?

I'm always trying to find ways to mix up the meals, I get bored preparing the same thing over and over. Thought this would be a fun way to get some new ideas.

Our family favorite is this one right now...

Lemon Broccoli Rabe
Recipe courtesy Aaron McCargo Jr. from Big Daddy's House on Food Network

Ingredients
1 gallon water
Salt
2 bunches broccoli rabe, chopped
3 tablespoons extra-virgin olive oil
2 cloves garlic, minced
Pinch red pepper flakes
1/4 cup grated fresh Parmesan
1 lemon, zested
Sea salt and freshly ground black pepper
Directions
In a large sauce pot, bring 1 gallon of salted water to a boil. Add the broccoli rabe and blanch for 2 minutes. Drain.

Meanwhile, heat a large skillet over medium-high heat. Add oil, garlic and red pepper flakes. Allow garlic to brown.

Add broccoli rabe to skillet with toasted garlic. Toss to combine. Toss in Parmesan and lemon zest. Season with salt and pepper. Cook over medium-high heat for 2 to 3 minutes
 
Down another .5 this week - I need another .5 and I'll hit the 40 pound loss that I've been working on since the end of August,

i apologize for being absent recently, truth is this is a very busy time of the year for me. I am very involved with organizing a 5k for a local non-profit organization and it takes alot of my time. i'm happy to do it, it's just a very busy time for me :goodvibes

so this is our last official week!?! wowsa.....i should've done better over the weekend :scared: hindsight and weekends always do this don't they. this morning i'll be taking a walk later, prolly outside even, and planning our meals for the week. I think I have lost about 1/2 of the weight I had hoped to at this point, I didn't have a large amount but the stubborn extra 10-15 that creep back up.

QOTD -- we like to grill mushrooms -- usually portobella and/or button mushrooms -- after washing off the mushrooms I either pour some lite Itailan dressing on them; or sprinkle with some celery seed and garlic, then grill. yummy!

my DH has found a temp fix for our online issues, apparently our modem is not working properly and cable company not coming until Wed morning. foof. hopefully his band-aid will hold out until then
 
Happy Monday everyone!

DS 9's science fair project is done -- yay! (or as he says booya!) Nagging is exhausting! I hope it burned a lot of calories. :lmao:

QOTD Monday - What is your favorite vegetable recipe?

We love any kind of grilled or roasted vegetable. Cooking technique is the same. Toss with a little olive oil, kosher salt and ground pepper. Grill or roasting times vary depending on the veggie. You can use what you have around. Great with steak, chicken or even hamburger. Umm! Must add to menu planning today.

I am excited for the last week, especially since we will be continuing on. I am within 2.5 lbs. of my revised goal so I hope that I make it.

We leave on Saturday for five days in San Francisco for spring break so I will miss the big finale. I hope they keep the thread open so I can catch up when I return.
 
Hi everyone, Life is taking over. Again. DH's physical therapy is going well, but I am the driver and do everything-er. Getting weary.

I've stayed the same weight wise again, but am thankful for no gain.

Love asparagus on the grill. DS makes is with lemon juice and light olive oil brushed on the spears. Mmmm. I'll even take my asparagus plain and cooked any way I can get them. I don't need any other flavoring. Mmmm.

well as i type i'm squeezed into a pair of jeans I couldn't begin to get on at the beginning of this challenge. mind you, they are tight, today is laundry day and they are the only ones clean :rolleyes1 but i figured they'd keep me honest and remind me why i'm going to do my toning DVD later :thumbsup2

I have been experimenting with different seasoning blends and spices, in lieu of heavy sauces full of hydrogenated oils and high fructose corn syrup. i have found some we really love; cilantro, rosemary, basil. Also Emeri's Essence is great for oven fries.

QOTD: What spice or spice blend have you discovered to liven up your dishes without extra fat/calories?

I think the Disboards as a whole seems to be a little quieter in the past several days -- that's what happens when we all figure out we can survive without the boards for a day or two! :rotfl:

I love lemon pepper, it's good for chicken and even popcorn! I also like chile pepper flakes to add kick to croutons and spagetti spice. I am sure I should be using them more so please share your secret spice with us all!

QOTD - I love Paula Deen's silly salt that we picked up while at her restaurant. I also use a lot of lemon pepper too.

I LOVE Sara Snow's stir-fry recipie... YUMMO!!!
Squash, zucchinni, onions, tomato, pepper, carrots, chicken and steak all cooked in the skillet with a little EVOO and worchester sauce... Sounds good for dinner tonight!!!

The brocolli rabe had more of a leafy green veggie with small broccoli like buds...I don't think it is even in the broccoli family. More like a turnip green...our family loved it.

Thanks. I would love to share! I've been tracking all of my calories and exercise on my phone. My sister has also been very successful tracking her calories on www.caloriecount.about.com. I've been trying to walk on the treadmill most days. Since it has warmed up a bit here in Illinois I can walk on my two 15 minute breaks and my husband meets me and we walk another 45 minutes at lunch (and make a 15 minute stop at Subway!) Today it poured from 11:57am to 12:55pm! It was like someone was just trying to mess up my walk! Anyway, I think I've been successful because of the calorie counting and because I joined this challenge. It kept me from quitting in those first few weeks and saying, "I'll just start again next Monday". I've been keeping pretty close to 1200 calories a day without eating any extra for my exercise (some days I get up to 1500) I'm used to it now and it seems much easier. We started a Biggest Loser Challenge at work about two weeks ago so I've got ten more weeks of motivation. That will help me behave a little better at Disney next week.

QOTD: how does your recent weight loss affect your thinking/planning of upcoming summer?


for me -- i have spent past 2-3 summers dreading getting dressed knowing i won't like the way my shorts fit, or don't fit. I'm looking forward to going to the pool and not feeling so self-conscious.

gotta go pack lunches! what's your workout plan for today? today I'm powerwalking 60 mins, probably on the TM as it's raining here :sad1: YOU CAN DO IT!! you will feel soooo much better when you're done :cheer2:

I'm with the others on the grilled vegies. I like to take the red skinned potatoes and zuchini, and precook them whole in the microwave first, then slice them in half, spray them with olive oil and a little salt and pepper and grill them til they are browned.

I don't experiment much with spiced, but do like to sprinkle a little chili powder on eggs sometimes, but usually will add salsa to most anything to add a little flavor.

:QOTD: how does your recent weight loss affect your thinking/planning of upcoming summer?

I haven't lost much recently, and started last summer off about 12 pounds lighter than I am right now, so I am determined to lose more of that 15 pounds I gained before this summer, and to continue exercising through the summer. That was my down fall last summer, I stopped my morning exercise thinking I'd do something outside after work, things came up, and before I knew it, I wasn't moving at all, and back on came the weight.
I also have a pair of capris that I wore to disney last april, and want to get back into them this summer.
