So, we have a dear friend. Single mom with 8 people under her roof including grandkids and daughters’ boyfriends. It’s a chaotic existence at times, and though they’re not a charity case, finances are often strained and she frequently mentions things like skipping beef in favor of chicken for financial reasons. We’re bringing her a nice prepped meal for Christmas & we know she’d be thrilled to get it. So far:

Pot roast
Corn casserole
Potatoes
Dinner rolls

The more we think about it, I think perhaps we should throw a simple salad together as well. Thoughts?

W/ a pot roast, I like green beans instead of salad.

Maybe the pot roast, corn casserole, potatoes, green beans, dinner rolls, & a fruit salad?

That’s a good point. We often have green beans with pot roast.

I cook my pot roast with carrots, onions, and potatoes in the pan. I think rolls are a great addition, and something green, salads are usually liked by most people! Nice gesture

Yes, mine is going now with carrots, potatoes, and green peppers :)
